What is the “allergy friendly bread”?

I’ve had the millet bread at BOG a few times and I like it. I haven’t a gf hamburger bun I like yet though. I’m looking at the Sci Fi menu and it lists “allergy friendly bread” for the sandwiches and I’m wondering what it is like.

Usually Udi's stuff at Disney. (For home, I can vouch for Schar brand GF bread and rolls: they originated in Italy, and have good taste and texture-I order them from Vitacost when I cannot find them locally.)
