What is rutabaga mash, lingonberry,Gravlaks & Kjottkaker ?

Anyone have an idea ?


I like meatballs - but they come served with a rutabaga mash and a lingonberry demi

I may like Traditional Kjottkaker with a cauliflower, garlic, cheese infused mashed potato, and SKIP the red wine beet sauce (ask for no sauce)
But- what is a Kjottkaker ????

Well it sounds like you know what most of it is, lingonberry is a type of berry, about the size of a blueberry if I remember correctly - the color of rasberries...

and rutabegga is a root vegetable, turnips, rutabagas, potatoes...

I googled the kjottkaker and here's the recipe from Disney:
Ingredients

1 pound ground pork
1 pound ground beef
2 ounces minced shallots
2 ounces minced capers
5 ounces steamed beets
2 tablespoons Dijon mustard
to taste kosher salt
to taste pepper
olive oil

Method of preparation

Steam beets just until knife tender, peel and small dice. Mince all vegetables and mix all ingredients together. Test a small amount for seasoning. Form 1 to 1 ½ ounce portion patties. Pan fry in olive oil to medium well.

Note: Canned beets can be used.

rutagaga mash would be like mashed potatos but taste like a not as strong little bit sweeter turnip( i love them!) I think gravlaks is smoked salmon kind of like lox( it might be some other fish but i think it is just salmon hate smoked fish so never had it) iamguessing the lingonberry demi is a demiglace so like a thick syrupy cooked sauce made of lingonberry

Gravlax is salmon -- usually smoked and served cold

a "demi" is a reduced sauce -- probably a meat based sauce reduced with lingonberries in them -- they kind of taste like a cross between cranberries and blueberries. Tart, but yummy.

Rutabaga tastes a little sweeter than potato, but will have about the same consistency as mashed potatoes.

gravlaks is never smoked-it is salted salmon filet.

Great thread After reading the recipe for kjottkaker it sounds like something I'd like to try, even if I can't pronounce it I also checked the menu on deb's and it's updated again and now has trout on the lunch menu that I don't remember seeing before. Was the chocolate mousse on there before or am I not recognizing it with the detailed description of Finished with a chocolate waffle and chocolate shavings? I'm really looking forward to trying this food and the princesses.
