I'm sorry the OP is having such a hard time adjusting to Oklahoma. It's too bad that she's dealing with so many clueless people. I hope for her sake that she can move on to a place that will make her happy.
I've lived in Oklahoma most of my life. My family moved here from Kansas City when I was six. Most Okies that I deal with are educated. Most care about their work. Some sadly do not, but I think that is true of all locations and can't be blamed on the state where they live.
Yes, parts of the state are flat, but other parts are not. If you look around there are beautiful aspects to the varied landscape here. Maybe instead of dwelling on the negative you should look for some positives. We've been involved with Boy Scouting and I could give you a list of beautiful places to visit. It's not the same kind of beauty as Kansas City, but it's a different beauty. Sort of rough around the edges and natural.
The people in Oklahoma will give you the shirt off their backs if you need it. They are some of the most friendly and down-to-earth people I've ever met. Maybe you could take some weekend trips around the state and visit some museums or state parks? Oklahoma City has great opportunities for entertainment with theatre and the philharmonic and sports. We have a lovely zoo and some great museums.
I guess this thread makes me sad. People across the nation seem to think we're living in the dust bowl surrounded by teepees. I once had a woman ask me if I rode a horse to school every day when I was a child.

My dad was a professor at OU. He once picked up a visiting speaker at the airport. The guy was disappointed that Oklahoma City looks like other cities. "Where are all the Native Americans? When will I see cowboys riding their horses?" Wake up people. We aren't living in a western. Threads like this one encourage the stereotype that we're backward and stupid.
It's not all that different here. Okay, maybe your experience hasn't been all that great. I'd like to offer an appology from my state. Maybe some of our people aren't all that educated. Maybe some don't care. But most of us care a whole lot. I'm a college graduate and so are most of my friends. I don't usually have any trouble with my service and I hope to live here the rest of my life. Please don't assume that everyone in Oklahoma is the same as the people you've met. If you do, you are expecting to be miserable the rest of the time you spend here. I hope your experiences in this wonderful state improve.
