What is everyone serving for Superbowl?

I always make the same appetizers so I am going to try to spice things up a bit... I have never made potato skins so I am going to try those.

Everyone has requested buffalo chicken dip plus I am going to make a seven layer nacho dip, chili, and mini cheeseburgers.

How bout everyone else?
 
I'm still thinking about it. I've been looking at recipes and trying to decide.

I saw a round loaf cheesy bread and potato skin casserole that looked interesting, just need to figure the whole thing out for some balance. Trust me to figure the carbs out first.

Gotta quit dissing, make a menu and get to the market!
 
My husband and I are just having my parents over for the game, so we aren't going all out. And everyone but my dad is following the Atkin's Diet right now, so there will be no chips, pretzels, or pizza :worried:

I'm making spinach dip - the kind you usually put in a bread bowl, but we will be having it on peppers, cucumbers, and broccoli instead.

Meat and cheese tray (no crackers)

Pork roast for dinner, so I can just throw it in the crock pot.

Cauliflower au gratin --- new recipe I made last weekend (from Southern Living magazine) and it is delicious. My husband and I didn't even miss the potatos.

My mom is bringing something, but I don't know what yet.

No carbs is not that fun for a party, but, I've been doing it for 2.5 weeks now, and it really isn't that bad.

Red Beans and Rice.....

We were going to do shrimp po' boys or Muffalettas, but are going with the beans and rice since it is turning cold.

Looks like we are doing Fajitas...We have a great meat market here in town that has the fajitas already mixed with the peppers and onions. So we will be buying a few pounds tonight and marinating them over the weekend.

More than likely we will make our own guacamole and salsa for snacking as well as toppers for the fajitas, but those alone are filling and since it will only be 3 of us at the house for the game, we don't need much.

We were bored of the same usuals we have, so I let each person in my family pick something they wanted. We ended up with:

*From the Crockpot: Pulled BBQ Pork Sandwiches with Cole Slaw
*Queso Dip with fresh Cilantro and Chips
*Teeny Weinies as DD would call them (mini pigs in blankets)
*We call them Cheeseburger Pies (don't know how we even came up with the name) but they are the hamburger/sausage/Velveeta mixtre on mini rye bread squares. I know they are called something different by everyone I know.
*A big tossed salad
*Fresh cut fruit for dessert

Since we will most likely be snowed in from our Superbowl parties, I'm glad we came up with this plan!

I wish I'd have thought to go with the Red Beans and Rice, Shrimp Po'Boys and Muffalettas though! YUM!

I'm making this for this weekend (not suoerbowl, just a get together with friends) and I just realized the only thing I have to dip in it is tortilla chips. What are you going to use for yours, if you don't mind my asking.
 
Ribeye Poyboys with a pepperjack cheese sauce and horseradish mayo.

Fleur de lis cookies and a Fleur de lis king cake with black n gold sprinkles .

Hot wings and several dips .

Pizza for the kiddos.

Hurricanes for the beverage .

I see you are from Newnan! My grandmother grew up there and my grandfather is buried there.
 
This and it is soooo good. I add extra jalapenos though. I also mixed about 1/2 cup of Italian blend cheese into the dip.

Jalapeno Popper Dip

Ingredients
2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies, drained
2 ounces canned diced jalapeno peppers, drained
1 cup grated Parmesan cheese

Directions
1.Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chiles and jalapeno peppers. Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese.
2.Microwave on High until hot, about 3 minutes.

Baked Variation If you would like to brown the cheese, bake at 375 degrees F (190 degrees C) for about 30 minutes.

Tortilla chips is all we ever eat with Buffalo chicken dip. Really good I think!:thumbsup2
 
We're snacking moreso than having an actual meal. DH intends to make pulled pork sandwiches in the crockpot. I plan to make a hot crab dip and buffalo chix dip. We use the new Tostito's dipping strips and also club crackers for dipping.

My buffalo chix dip recipe is 4 ingredients and super easy. I use 1lb chicken breasts, cooked & diced (don't use the canned chix as it isn't as good); 2 cups blue cheese dressing; 1/4-1/2 cup hot sauce depending on how hot you want it; 1 1/2 cups grated cheddar-jack or mexican cheese blend. Mix all ingredients, pour into casserole dish and bake at 350* for 25 minutes.
 
Shrimp etouffee (going cajun in honor of the Saints), chips, guacamole, soda, and a black and gold frosted yellow cake in the shape of the saints logo.
 
Gosh, this thread is making me want to break out my K. Paul's cookbook! Too bad we're snowed in, or I'd be at the grocery store including some of these mouth watering ideas~:goodvibes
