what in the world will be for dinner

I just walked in from school. We were away all weekend. I have nothing in my cupboards and the house is a tiny mess. I want to get dinner together before dh gets home from work while cleaning up. First I have to run to the store.
Any ideas for something quick that doesn't need me standing over it so I can clean up while I cook? I'd like it to be nice as I've been a bit slack in the dinner dept. lately plus I want to watch desperate housewives on my tivo after dinner.

I'm having Spaghetti squash with roasted veggies. I saw the recipe and loved the idea of something different.

We're trying to eat healthier and use more vegetarian recipes.

we're trying to eat healthier too but I grew up in a vegatarian home with alot of spaghetti squash and I hate squash of all kinds just on principal it would seem.
I am unwinding for 15 minutes checking email etc then I have to run to store so hurry with all your fantastic ideas.
