to the moderators - not sure if this is the appropriate board to post this. feel free to move it if it's not!

DH and i are staying 4 nights at POP at the beginning of may. i seriously think that will be plenty of time for us to get our disney fill for awhile, but is it a big deal if we want to add one more night (which includes hotel, park hopper and DDP for one more day) at the last minute? just wondering if that's an option we may have. and when i say "last minute" i mean the last day of our vacation, like adding one more night on checkout day.

I do not think you can add the parkhopper, extra day to your ticker, nor the dining plan. You may be able to stay another night IF the hotel has room. (May isn't usually as busy) And I think you would have to buy a single ticket. If you think you may stay, add another day to your ticket now. It's only a couple of bucks to go from 4 to 5 days. If you don't use it, you can get the leftover day turned into a no expiration ticket for like 10 bucks I think. So when you come back you can use it. It won't be wasted and cheaper than the price of a one day ticket.

I remember many years ago, they always used to leave a message on your phone the day before check out that included something to the effect of "if you wish to extend your trip another day, please contact the front desk for availability". We actually did it once. We were supposed to check out Saturday, and we checked out Sunday instead. It was kind of cool extending at the last minute. Of course, that was on a room only, not a package.

Don't know about the package, but you will be able to get a rm.
