What happens when your kid turns 18? Add’l room?

Wondering what happens once a kid turns 18. Do you need 2 rooms at that point?

No. The room capacity is not age-dependent, so long as any extra adults are okay with the available bed(s). The extra fare for third (and possibly fourth) room occupant does appear to be age dependent to some extent, but still lower than fare for first two occupants.
 
We did. Our boys are young adults and we get them their own adjoining cabin. No way we would put 4 adults in one cabin. Not a vacation for us.

As noted above capacity is not age dependent. In 2019 we had 4 adults (kids 19 and 22) in 1 veranda room. For the amount of time we spent in the room it was not an issue at all. The veranda and split bath help very much too. And a shoe holder organizer was a must do for "stuff".
