With SWA, Song, JetBlue, Spirit, and others increasing the flights from the northeast to Florida a lot over the last year, I've also been surprised at how full the planes all seem to be given the huge amount of capacity added. Flying my college aged daughter to and from school near Orlando has become very expensive at times as most of her breaks are at peak periods. I would recommend that you set alerts on Yahoo, Orbitz, and others to tell you when fares drop. This will usually allow me to get a reasonable price if I act quickly on the sales when received.
The other option is to use the new Song and JetBlue service to the west coast and visit that other Disney property during school breaks as California doesn't have Feb 21-25 or April 18-22 as school breaks and most people don't think about California as a destination on school break. We got cheap flights to LA and a nice hotel at DisneyLand for 25% less than the Florida packages when we priced our upcoming trip last November.
