If you are familiar with trout-- native, not stocked, then that is what salmon tastes like. Otherwise...it tastes like salmon. I do not feel it is fishy at all, even though it is a fatty fish-- and that's a good thing for flavor. That is my personal opinion, but given that we are only miles from the ocean and eat a lot of fish, I may have eaten a broader range than some people.
I agree that buffet salmon is probably not a good way to judge whether you like it or not. It can be moist still and OK, but freshly cooked (grilled is great--I find no sauce neccesary-- just lemon juice) is by far the best. Also, wild salmon has a much stronger flavor than farmed.
If you like fish-- not just flounder or sword, you will probably enjoy freshly cooked salmon.
