What does Epcot stand for?

Jamieb is correct. However, some years ago (seeing as Disney realized that it wasn't really a "community") the acronym was dropped and officially E.P.C.O.T. became Epcot.
 
Walt Disney envisioned having people live as well as work in the geographical area that is now Epcot. But because these people would also vote and might change the complexion of the Community in ways he might not want, Walt changed his mind and decided not to have people live there.

Ride the Tomorrowland Transit Authority at Magic Kingdom, In one of the tunnels a model of one of Walt's E.P.C.O.T. designs is displayed.

The concept of an E.P.C.O.T. did not die. Such a community was built, it is called Celebration and is located diagonally opposite what we call WDW, using as a reference the I-4/Rte 192 interchange, on land which is actually part of the Disney holdings but defined as a different town.

I haven't researched this, but if Celebration is not conducive to residence by cast members of all walks of life, it is a failure.
