what do you think of this plan?

We are staying off-site for 2 days and then doing 5 days at POP. We are renting a car for first 2 days. My plan when we are going to POP is to drop off family, check them in, and then take car back to airport (MCO) and using ME to get me back to POP. Is there a better way to do this?

Depends who you rent from. Alamo has a desk at the Car Care Center, they will give you a ride back to POP, there are others in Lake Buena Vista where you could take a taxi back to POP or walk to DTD and take a bus back to POP. Do some research I'll bet you find a decent price that would require less time than going back and forth to the airport.
