I try to carry as little as possible.
On my last trip I used a small/medium sized crossbody bag and I carried (someone else held onto the camera):

cell phone
ID holder with zipper compartment for cash and slots to hold credit card, license, room key and fastpasses
chapstick
gum

Depending on the weather:
poncho
light cardigan that doesn't take up much space
