I don't actually stuff the turkey, but my dressing is Cornbread, celery, onion, sage, poultry seasoning, garlic, salt pepper. I use chicken stock to make it wet then bake. Man, you are making me hungry.
 
I have a friend that uses oysters in her stuffing. I haven't tried it, but everyone raves about it.
 
Pepperidge Farms herbed cubes
Butter
Chicken stock

Celery diced
ground turkey sausage
salt & pepper

I chop onions and celery in my food processor, then cook it in olive oil. I puree the turkey's raw liver and add it to the pan, stirring a lot so the liver is spread throughout. I pour the mixture over half a loaf of white bread, broken into pieces. I stuff the bottom and the neck after it cools and shortly before I put the turkey in.

My mother used to put eggs, pepperoni and lots of grated cheese in hers. I didn't care for it growing up, but I'm thinking about trying it one year for old times' sake.

My wife makes the stuffing out of ground beef. I know that there are almonds, green olives, raisins, eggs, onions and many spices that I don't know the names of. People love it.
 
For the Turkey: White bread crumbs, butter, salt, and pepper (it gets a lot of flavor from roasting in the turkey and then the gravy).

I make a second "stuffing" that's not done in the turkey: Corn Bread, french bread, onion, celery, sage, parsley, salt, pepper, and chicken stock.
 
For me it is:
Bread crumbs
Butter
Spicy Sausage
Celery
Onions
Turkey Seasoning
Sage
Chicken Broth

Bake in a pan for at least 1 hour, to get some crispy edges.

Sometimes, I'll add dried cherries or cranberries... and my dad always adds nuts, which I don't hate, but don't necessarily like and don't add when I make stuffing. Which, for the record, I make at least 4 times a year... just to eat as is... with gravy.

I stuff a 9x13 pan these days instead of the turkey but my recipe is:

2-3 large loafs day old bread, ripped into pieces
onion
celery
stick of margarine
chicken stock
bells seasoning

I use the margarine to sweat the onion and celery, add the bread, moisten along the way with chicken stock, then season with the Bells.

I responded ealier, but left out a few things, This is exactly what I do, except for the cut up chicken. I just love southern dressing. Man I can't wait.
 
I never liked stuffing as a kid, but I found this recipe one year and now it's a tradition.

2-3 loaves of torn up bread (mixed white and wheat) nuked to make it day old
onion,
celery,
and mushrooms chopped and cooked in olive oil,
chicken broth,
sage,
thyme,
salt,
and pepper to taste.

I go heavy on the sage. I don't stuff the bird. You can bake this or make it in the microwave. . .which is nice.
