Anyone have a crock pot recipe for Tortilla Soup? I'm new to the crock and hoping to find some yummy recipes... a few ideas after reading this entire thread!!

However, one question... I leave thehouse by 8:20.... lucky to be home by 6:20.... That's a full 10 hours.... can the six hour recipes be adjusted to LOW for 10 hours?

I sometimes cook a roast with a jar of salsa, and then shred the meat and use it in tortillas with sour cream, cheese, etc.

This may sound like a dumb question, but I found a recipe for crockpot chicken and it calls for 1/2 cup of dry sherry.... I never used dry sherry and don't have, is there anything I can substitute? Or do you think it would be ok if I just eliminated it??

Sure! I have my modifications which I list below..

4 chicken breast halves
1 garlic clove
2 tbsp. margarine
2 14 1/2 oz. cans of chicken broth
2 14 1/2 oz. cans chopped, stewed tomatoes
1 cup salsa (whichever you prefer - the chunckier the better!)
1/2 cup chopped cilantro
1 tbsp ground cumin
8 oz. monterey jack cheese, cubed
sour cream
tortilla chips

Cook, debone and shred chicken (I use boneless skinless - it's easier).

Add minced garlic to margarine in slow cooker. Saute. (I omit this - takes too long for slow cooker to heat up!)

Combine all ingredients except cheese, sour cream and chips.

Cover, cook on low 8-10 hours.

Place a small amount of cheese (depending on your liking) (I use shredded) in a bowl. Ladle soup over cheese. Sprinkle with chips and a dollop of sour cream.

This is such a good thread! Love my crockpot.

Tomorrow, I'm making a chuck roast. Just adding spices and a can of coke to the pot. Turns out very tender.

Some I got from here over the years, so I apologize - not trying to take credit.

Poor Man's Dinner.

1 to 1 1/2 pounds of ground beef.

Pepper salt and garlic powder to taste.

5 to 6 large potatoes, peeled and sliced.

1 large sweet onion, halved and sliced.

2 cans of condensed Cream of Mushroom soup, undiluted.

chopped fresh parsley.

In skillet brown ground beef and drain. Season with pepper, salt and garlic powder. Lightly spray inside of crockpot with cooking spray. Layer beef, potatoes and onion slices (you will get about 4 layers). Pour the soup over all and set crockpot on high for 6 hours or low 8 hours. Garnish with parsley.

You can alter this dish too. Instead of Cream of Mushroom you can put condensed Cheddar cheese soup over the potatoes, beef, onion mix.


Slow Cooker Lasagna

1 pound lean ground beef
1 onion, chopped
2 teaspoons minced garlic
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 1/2 teaspoons salt
1 teaspoon dried oregano
1 (12 ounce) package lasagna noodles
12 ounces cottage cheese
1/2 cup grated Parmesan cheese
16 ounces shredded mozzarella cheese


Directions
1 In a large skillet over medium heat cook the ground
***beef, onion, and garlic until brown. Add the tomato sauce,
***tomato paste, salt, and oregano and stir unti well
***incorported.Cook until heated through.
2 In a large bowl mix together the cottage cheese, grated
***Parmesan cheese, and shredded mozzarella cheese.
3 Spoon a layer of the meat mixture onto the bottom of
***the slow cooker. Add a double layer of the uncooked
***lasagna noodles. Break to fit noodles into slow cooker. Top
***noodles with a portion of the cheese mixture. Repeat the
***layering of sauce, noodles, and cheese until all the
***ingredients are used.
4 Cover and cook on low heat in slow cooker for 6 to 8 hours.


Crock Pot Pork Chop recipe:

I use the thin boneless pork chops, usually a family pack. Dump in 2-3 cans of Chicken with Rice soup and the chops. Salt and pepper to taste. Cook on low all day. Serve with mashed potatoes.

Chicken Fried Pork Chops in crock pot:

Again, I use the family pack of boneless chops. Dip them in flour and brown them in a skillet first. Put in crock pot with 2 cans of cream of chicken soup. Cook on low all day. I serve with rice or potatoes.

Crockpot Ham with Cheesy Potatoes
1 Bag (28 oz) of frozen diced potatoes with onions & peppers (thawed)
2 cups shreaded cheddar & monterey jack cheese blend (8 oz)
1 can (10-3/4 oz) condensed cream of celery soup
1 container (8 oz) sour cream
3-pound fully cooked smoked boneless ham

1. Spray 5- to 6- qt slow cooker w/cooking spray. Mix frozen potatos, cheese, soup and sour cream in cooker. Cut ham lengthwise in half, place ham on potato mixture.

2. Cover and cook on low heat setting 5 to 6 hours or until potatoes are tender.

3. Remove ham from cooker; place on cutting board. Gently stir potatoes well before serving. Cut ham into slices, serve w/potatoes.



Beef Stroganoff

2 lbs. beef stew meat

1 med. onion chopped

1 can Golden Mushroom Soup

1 can Cream of Onion Soup

1 can sliced mushrooms (or fresh)

8 oz. Cream cheese (cubed)

8 oz. sour cream

¼ tsp. pepper

Throw meat & soups in crock pot

Low 8 hours

2 hours before serving, add mushrooms, sour cream, & cream cheese

Serve over Egg Noodles

*****I couldn’t find Cream Onion Soup, so I used French Onion, still yummy


CROCKPOT APPLE CAKE DESSERT

6 apples peeled, cored and sliced
sugar
cinnamon
8 oz of yellow cake mix
1/4 c melted butter or margarine


Put slices of apples in CP. Pour half a package of dry cake mix over apples. Drizzle butter over cake mix. Sprinkle cinnamon and sugar mixture over that and cook on low 1 1/2 to 2 hours. Keep checking and it's done when the apples are soft.
 
I made the tortilla soup and it was awesome! Even dh liked it and he is not a soup eating guy. ds ate the chicken and he gave it a thumbs up too!
 
That Easy Slow Cooker French Dip recipe is listed on allrecipes.com and is fabulous. A couple of the other Allrecipes.com Crock Pot recipes I have bookmarked:

Creamy Italian Chicken
2 lbs. boneless, skinless, chicken breasts
1/4 cup butter or margarine, melted
4 ozs. of an 8-oz. tub of cream cheese and
chives
1 (10 3/4-oz.) can golden cream of mushroom soup
1 (0.7-oz.) pkg. Italian dressing mix
1/2 cup water or white wine
Angel hair pasta

1. Cut chicken breasts into strips and put
chicken strips into slow cooker.
2. In a separate bowl, mix melted butter or
margarine, cream cheese, soup and Italian dressing;
mix together.
3. Pour mixture over chicken strips and add in
white wine or water.
4. Cook on Low for 6 to 8 hours. Serve over
cooked angel hair pasta.
Serves 4-6.

I double everything but the chicken because we like the extra sauce. I also cut the chicken into chunks instead of strips. I find that 6 hours is too long to cook it so I'd do it just until the chicken is done. I've never found the chicken to taste dry in this recipe.

Don't waste your money! Really. I read about this tip and it works. Rinse out your crockpot, put some dish detergent in it with plenty of water and put the setting on keep warm. Let it "soak/heat" for about an hour. It really loosens up everything and clean up is a snap!

Got something even better!

Just soak the inside of the crock pot with DishWasher detergent for tough jobs. It works like a charm.
 
Cranberry Pork Roast

1 Pork Roast
1 can whole berry Cranberry sauce
2-4 tbs brown sugar
2 tbs prepared yellow mustard.

Cook all day. Also yummy to peel and slice up some sweet potatoes and let them cook in the sauce as well.
