What do you do with Cooked Shrimp?

I was thinking of using some for dinner, but aside from shrimp cocktail I really can't think of what to do with it. Anyone have any good ideas?
 
This is one of my favorite quick meals if DH has to work late (he's allergic to shellfish.) In a frying pan, I saute some garlic in a little bit of butter and then add the cooked shrimp at the last minute just to heat it up. Then I just add it to some whole wheat thin spaghetti or pasta. (I start cooking the pasta before I begin with the garlic.) I'll often add broccoli if I have some or I add some spinach or fresh mushrooms to the garlic as I'm sauteing it.
 

Get a couple of packs of Knorr Noodle Afredo Side dishes, and add the shrimp just to heat through before serving. The Parmessn flavor (with the plain and spinach noodles) would work too. Can also add in some broccoli or other veggies you may have around.
 
I make a really yummy dish called Shrimp Orzo pasta. I think it is a pampered chef recipe. Incredibly easy, especially with the cooked shrimp. I toss the shrimp with some salt/pepper and a dash of sugar then heat up in a frying pan. Remove the shrimp then in the same pan add 8 oz of orzo, 1 cup clam juice and 2 cups chicken broth. Heat for 10 minutes then stir in 1 tblsp butter, 1 splash of lemon juice and 1 cup frozen peas. The recipe also calls for a little mint, but I don't put that in. Remove from heat and layer shrimp on top, then cover and let sit for 5 minutes.

It is so so easy and really good. Pampered chef also has a shrimp linguine recipe that is really good, easy and light that I also use the cooked shrimp in but I don't know that one off the top of my head.
 
Man, I could eat shrimp cocktail ALL DAY LONG!!!

Shrimp salad particularly if you have some Louisiana Remoulade Sauce.

Saute garlic in olive oil, add and reduce about a cup of white wine, the juice of about 1/2 lemon. Add shrimp and fresh parsley, black pepper to taste, along with a pat of butter. Serve over linquine.
 
I sometimes throw it in my spaghetti. I like to have some sort of protein (and this is very low calorie) to keep me feeling full. Regular marinara sauce.

:thumbsup2 My fave, too (with the broccoli or spinach and mushrooms!). I use olive oil instead of butter, toss the pasta in the pan for a few seconds to toss everything together, and add a bit of basil.
 
I like to put them on a salad with shredded cheese, avodado and tomatoes. YUMMY!

another shrimp/pasta idea....

i usually have this sauce on hand, but if you're interested in making it it's really quick, simple, delicious, and versatile!!!

boil tomatoes and jalapeno peppers in salted water. the ratio depends on how much heat you like. i think 2 tomatoes and 1 pepper would be pretty safe. after they boil and cool a little, peel the tomatoes. put the tomatoes and peppers in a blender and pretty much liquify them. towards the end add fresh cilantro (the more, the better!). you can add a little of the boiling water if you need to.
ok, so this is the sauce i have on hand.

i saute a little finely chopped garlic and onion in butter/olive oil. when that is cooked, add the shrimp. add some of the above mentioned sauce and cook until the sauce reduces just a little and kind of "sticks" to the shrimp.
boil pasta (we like penne), and toss with butter and garlic salt. pour the shrimp/sauce over the pasta with more fresh cilantro and some fresh lime.

I usually use them in a salad with salad greens, purple onions, tomatos, whatever other veggies that look good. Or you can chop it up fairly fine and make a shrimp salad similar to chicken or tuna salad. My other favorite is Zatarain's Jambalaya (box mix but really, really good), just add the shrimp and some smoked sausage (add after the rest is cooked, and just let it heat through). Its also good with pasta and Alfredo sause (homemade or jar). Or as a shrimp scampi (the garlic/butter sauce) over pasta with crusty french bread YUM.
