What do I need to reserve ahead of time?

Our first disney cruise is coming up in a couple weeks (yay!!). I'm wondering if i need to make reservations for any activities ahead of time, and if so, which ones? I'm assuming the adult restaurant requires reservations ahead of time. Anything else?

We make reservations for Palo and any Castaway excursions we want in advance (we don't do ship excursions in other ports). For Palo, if it's all booked up online, just check once you get on the ship.

If you want to do the Royal Tea or book any appointments at BBB, you will also want to book these in advance.

My wife is going with her granddaughter. Here is Disney's description, "Doesn't your little one deserve the royal treatment? Enchantment reigns supreme at the Royal Court Royal Tea—where storytelling, dancing, singing, yummy treats, elegant gifts and visits from Disney Princesses are all part of the magic!". This is an activity on the Fantasy, I do not know about the other ships. It must be high in demand because it is pretty expensive (around $300 for the two of them).
 
I'm assuming the adult restaurant requires reservations ahead of time.

You might find that there are no reservations available anymore for the adult restaurants if your cruise is only two weeks away. But, once you get onboard read the Navigator (the daily schedule of all activities) and there will be a listing as to where to go on the first day for reservations at Palo and Remy. Go there as soon as they open and you ought to be able to get what you want. I think most popular reservation is Palo brunch as this is only offered on sea days.

You might also want to book your port adventures before you get on the ship. Once those sell out they truly sell out (no reservations available on the ship like Palo and Remy).

Finally, there are a few things that can be booked on the first day on board, mainly certain character meet and greets and alcohol tastings for adults. Check the Navigator for information on those.

Once the cutoff happens, we get charged regardless if we change our mind or not. Do they have alcohol tastings we can sign up for that are done by DCL that we do not have to sign up in advance for, or at least day we get on ship?

Yes, DCL has general alcohol tastings, open to everyone on the ship. These you register for on the ship. Some fill up the first day, others you might able to just sign up at the door. I think Mixology is the most popular one.

I've done this one. Amazing! You taste wine, champagne, port and whiskey (at least the one I went to did). And different chocolates bring out notes in the drinks. Very tasty, educational, and fun. Will be doing this one again.
