What did you have for dinner last night?

Shrimp alfredo is delicious; I've been thinking about that as a possibility for New Year's Eve. Have you ever tried lasagna with cottage cheese instead of ricotta? It's not the same of course, but it does in a pinch. Of course, you might not have had any cottage cheese either.

It was really good too, I made the shrimp with shallots, garlic, capers, butter and white wine and we all mixed to taste. :) I've made lasagne with cottage cheese, but nope, didn't have that either. I found a recipe for sour cream lasagne but it didn't sound right so I just went with the shrimp alfredo. lol

I was going to ask you, would you mind sharing the recipe for your potatoes?? :)

Thanks for the PM, they sound amazing!! :) I can't wait to make them!! :)
Last night we had the rest of the spaghetti from Christmas, we had various sauces, I had balsamic vinegar on mine. I also had salad and garlic bread. :) The garlic bread had a pesto cream cheese spread on it, so good.

Leftovers for us too; plenty of steak and rolls. There was about a 3" by 1" piece of potato gratin left which I got. The boys made some boxed mac and cheese to supplement their meal. Steamed veggies. More cookies.

I hope you enjoy the potatoes. DS13 has already requested another batch (I think he ate half the Christmas day pan himself, LOL), so maybe we will have them again sometime in the next week.

I made stroganoff (the box from Hamburger Helper lol) and garlic bread, had to eat the rest of the bread before we had to toss it. :)

I made a lasagna-type pasta casserole. I really don't know what to call it since I made it up. It had pasta, mushrooms, Italian sausage, crushed tomatoes, and three cheeses. It was pretty tasty. We had green salad with that.

Last night we had Chevy's. I wanted something more like Benihana or PF Chang's but both of those are about an hour away and we really didn't want to go that far. So we went to Chevy's, I had the Chipotle Chicken Enchiladas, they are really good and I must have been hungry because I ate it all.....LOL I usually eat one and have the rest for lunch the next day.

Last night was pork chops, brown rice, and steamed veggies. We had beignets and hot chocolate for lunch though so the rice and veggies were supposed to help make up for that. :)

We had tacos (just standard ground beef tacos) and I made the Big Thunder slaw because I had some cabbage I needed to use up. Leftovers for lunch today :)

DD13 and I went shopping after work and I worked late, so we went to Panda. I had a coupon for a free 2 item entree, I actually got a 3 item so I would have lunch today, I got pot stickers (ate all of those lol), beijing beef, mushroom chicken and since they had NO chow mein :( I had fried rice.

Well we went out last night to see the Christmas Lights at The Butterfly Pavilion. We went to this restaurant nearby and we started with these GIANT soft pretzels that came with this jalapeño, spinach queso dip. It was divine! Then I had these carne asada street tacos that included avocado slices and this fabulous hot sauce. It was so good!

What was really funny is I almost pulled out my phone to take a picture of it just like I was at Disney. Lol

LOL Emily, I actually do that sometimes, and if I'm with the BFF she does it too. LOL I almost did it today at the sushi place we went to. :)

We had pizza last night, BBQ chicken with onions, banana peppers and olives, it was amazing.

Last night dinner was Red Lobster, DBF and I shared the 45 shrimp for $17 deal and added a bowl of Lobster Bisque..OMG YUMMY!!!!!

I made a ham & potato casserole, it was ham, potatoes, broccoli, onion, sharp cheddar, colby jack, cream cheese, heavy cream and Panko crumbs all mixed together, baked and then topped with a few more Panko crumbs and some more colby jack cheese, it was good.
