What did you bake today ? OK if not from scratch

Last night's dinner was Cook's Country's Chicken Parmesan Meatballs. Chicken meatballs topped with mozzarella, baked in a quick fresh tomato sauce, then finished with a crispy parmesan breadcrumb mixture and some fresh basil. All the flavors of the Italian-American classic without all the mess. This goes into the oven in less than half an hour, and served with crusty Italian bread and a big green salad it's comfort food at its best.

DS12 and I are making Martha Stewart's maple leaf cookies. I can't find the recipe online anymore or else I'd post it. I'm concerned about how they'll turn out because I'm not sure my son put enough syrup into the dough.
 
Today I have not baked anything, but over the weekend I baked some cookie cups - basically salted caramel chocolate cups as I wanted to try out this mold. I plan to use them for some sort of dessert during the holidays.
The mold worked really well and I may fill them with a tiramisu mixture - not sure yet

A bacon/cheddar/broccoli impossible quiche. I used Red Robin cheddar biscuit mix instead of Bisquick (there's no cheese in the Red Robin mix). Came out fine with that substitution. My son is staying with us and had never had it before. I told him it was an important part of 70s/80s casserole cooking, lol. I also baked an apple crisp, mainly to get rid of a small pile of apples no one seemed to be eating.
 
I will be baking something tonight for a Friendsgiving tomorrow and am looking for suggestions. One person is already making a pumpkin pie, another has cookies. Any suggestions?
 
Using up odds and ends--a baked ziti-esque casserole using some rigattoni and elbow macaroni. I know it might end up tasting odd texture-wise, but I'm clearing out the fridge to make room for Thanksgiving stuff. This used an open jar of raos, a half used container of ricotta, some not full boxes of dried pasta, odds and end cheeses etc. Hope it's good, because it's what we're having!
 
Just out of the oven and cooling, ATK's Amish Cinnamon Bread. This is an easy, fool-proof quick bread that comes together in about 10 minutes. It's so delicious. The high sugar content keeps the bread moist every time, and the kick of cinnamon is off-the-charts. I use Vietnamese cinnamon because I like its spicier profile. The bread freezes well too, if it gets that far. It's terrific toasted and topped with some good butter.
