What can I make with leftover rotisserie chicken?

I use it in just about every recipe that calls for cooked chicken.

The family's favorite though.
I buy the jar pesto and Sam's or Costco (found in the refrigerated meat/cheese section).
bacon bits (the real bacon kind)
penne pasta (entire 1 lb box)
asparagus.

I boil the pasta. When I estimate it's half cooked I throw in the asparagus (cut-up) to cook with it. When the pasta is done. I drain the water out of the pot, add half the jar of pesto sauce and return to stove. Once I've mixed and am satisfied with the pasta to sauce ratio I add the chicken and bacon bits. Mix until it's warmed. Done.


Another favorite is to mix the chicken with barbeque sauce. Throw on top of pizza crust with some red onions and cheese. BBQ Pizza:)

Chicken and rice.... I always have a use for chicken.
 
Okay, being from Louisiana....

I've dumped the whole remainder of the chicken in a big pot, covered it with water, and let it boil. While it boiled, saute frozen seasoning mix (or chop up celery, green onions, bell pepper). Debone chicken, add the seasoning mix and some sliced sausage (like Bryan's).

If not as dark or as thick as you want, add a jar of roux--but I haven't had to do this with a well-baked chicken. For spiciness, add some Cajun seasoning.

Presto! Shortcut gumbo!
 
I've made some of the things listed already. I've also made chicken enchiladas. Super quick and easy.
 

Pick the bones clean and make a broth from it for tomorrow.

As for the chicken, I'm in the same boat. I used half of my slow cooked chicken for chicken pot pie. I made the crust myself. Which was most the work.

I made a broth from the bones, and used it to make potato soup. Turned out pretty good. I still have a full jar left of broth.
 
I like to put in a skillet with taco seasoning and heavy cream. I use lots of taco seasoning and let the cream sort of cook down. I boil some pasta noodles, drain and add to pan. I love to make this and it goes fast in our house.
 
We always make chicken salad sandwiches with sliced green grapes, a little celery and chopped walnuts or pecans. Goes well in an avacado half with a piece of banana nut bread on the side. I've also shredded it and made a chicken/noodle casserole with a soft cheese, pease and chopped onions. I serve that with sliced melon and steamed broccoli or something similar.
 
Just in case you want more ideas for the future, we have make chicken salad sandwiches with the leftover rotisserie chicken. To make it really easy, after we're done with dinner, I shred the rest of the chicken and make the chicken salad that night, so the flavors can marry overnight and all you have to do the next night is pair it with some easy sides! :)
 
I don't really have any suggestions about dinner, but I feel for you! I'm also pregnant and some things just sound icky. I made pancakes for dinner last night. Not liking protein right now (although I need it); soft carbs are the best--mashed potatoes, muffins, pancakes. I couldn’t care if I eat anything else for the next few months. Good luck!

I have been going through the samething, I was surprised by my pregnancy and didn't find out till I was 14 wks and so it was like my body had to make up for the three months that I missed and for the last three weeks I have barely been tolerating food. The thought of eating meat has made me want to vomit alone, but I have started to get my appetite back in fact to night I just had to have chinese food which was chicken and broccoli. Good Luck w/ your food adventures.

So far I've only been opposed to sweets. Which is BIZARRE in my book because I'm addicted to all things sugary. Cheese, veggies, meat, starches... those are all the things that sound especially tasty to me right now. Same goes for my last pregnancy. The only things I craved were ice water & cucumbers.
