What can I make with leftover rotisserie chicken?

We got a rotisserie chicken from the grocery store for dinner yesterday and as per usual, we have some leftover chicken. Typically I make chicken tettrazini (sp?) with it but... well, I'm pregnant and that just does NOT sound good to my stomach.

So I'm scratching my head trying to think up something else to make with it for dinner tonight. I have both white & dark meat though we don't like eating the dark meat just on its own. It can't have any cheese in it because of DH's food allergies.

I do have leftover homemade mac & cheese that I had made for DD and I, and leftover rice that I made for DH. We can use that for a side dish if I can make something out of the chicken for a main.

Any ideas?
 
I either make chicken soup or chicken salad with the leftovers. I made some soup last week that was so good! Ithrew in some rice instead of noodles, and used whatever vegetables etc that I had in my freezer.
 
Chicken pasta alfredo, chicken salad, chicken soup or just plain old left over chicken.

I have left over rotisserie chicken from last night too. I was planning on either making individual chicken pot pies (in ramekins) or chicken pot pie pastry puffs.
 

I don't know if you would be up for this as I am pregnant too and while it sounds good I don't know if I could bring my self to eat it since I haven't been wanting to eat meat at all. Maybe you could add it to your list for another time.

Chicken Pot Pie

Ingredients
1 rotisserie chicken, skin removed and chicken shredded
1/2 teaspoon sweet paprika
1/2 teaspoon dried sage
1/4 teaspoon dried oregano
Salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
1 cup frozen pearl onions
1 cup frozen peas and diced carrots
2 cloves garlic, minced
2 tablespoons all-purpose flour
2 cups low-sodium chicken stock
1 cup heavy cream
1 store bought pie crust, unbaked and thawed if frozen
1 egg, lightly beaten

Directions

Preheat the oven to 400 degrees F.

Heat a 10-inch cast-iron pan over medium-high heat and add the olive oil, chicken, paprika, sage and oregano. Season with salt and pepper and stir to coat. Cooking on low really just to reheat the chicken and get the seasonings fragrant. Remove the chicken from the pan with a slotted spoon.

To the same pan, add the onions and peas and carrots and sprinkle with salt and pepper. Stir and cook until the onions become tender, 3 to 5 minutes. Add the garlic and cook until fragrant, about 1 minute longer. Sprinkle in the flour and stir until the flour dissolves into the vegetables and juices. Add the chicken stock and raise to a simmer, stirring until thickened. Once the liquid has thickened, stir in the heavy cream. Season with salt, if needed.

Return the chicken to the pan. Unfold the pie crust and place over the top of the filling, tucking the excess edges inside the pan. Brush the crust evenly with the egg wash. Using a knife, gently cut 3 vents in the top of the crust. Place in the oven and bake until the crust is golden brown, about 20 minutes.

Yum yum yum.... chicken pot pie sounds SO tasty but I just do not have the energy to whip that up today. My goal is something 1) quick and 2) mainly edible. Lol.

I just did a freezer meal swap with a couple of friends & one of them actually made pot pies... I'm so looking forward to defrosting and making that. But I've got to use up these leftovers first.

You can make anything that you would make with any other leftover chicken.

Here are some ideas:
Mix with mayo, salt, pepper, diced celery and onions and mayo for chicken salad (to put on sandwiches)

Mix with chicken gravy, mixed frozen veggies and cook in a casserole dish, top with biscuits from a can (chicken pot pie)

Mix with gravy, put it over the top of some slices of toast for hot chicken sandwiches

Slice it and make sandwiches

Slice it up and put it on top of your favorite salad (I like a combo of romaine, spinach, tomatoes, cucumbers and blue cheese dressing) or make a caeser salad and top with chicken.

You can make chicken noodle soup with it.

Stir fry some veggies, add the chicken and serve over rice

We make chicken quesidas with our left-overs. Fast and easy, our store's chickens have gotten so small there aren't usually any leftovers, so we usually just make chicken in the crock pot and shred it. You can also make chicken nachos. Or chicken salad or ceaser salads....the list goes on.
 
white chicken chili rachael ray has a really easy recipe on her show website from a few years ago...it was a viewers recipe and she won a contest for it
 
Chicken wraps- tortillas, chicken, lettuce, tomato, ranch

Chicken & rice- 2 cups cooked rice, one can cream of chicken, some cheddar cheese and chicken

BBQ chicken sandwiches

I LOVE cold chicken sandwiches to take to work. Just mayo and chicken, then if I have them, I add dried cranberries.
 
I would throw it in the skillet with some taco seasoning/water, like you are making taco meat, then use it as taco filling.

Throw some cheese, lettuce, tomatoes, etc. on top and voila!

Or..depending on how much you have left, take some chicken broth, add some spices, chop up some veggies (or used frozen/canned), throw all that together with the chicken. Simmer for a while, throw in some rice, and simmer more. Serve as chicken soup with some breadsticks or grilled cheese. YUM!
 
I made crock pot soup with a rotisteri chicken. All I did was add onions, celery, and garlic to the crock pot with a bit of butter. once the butter melted I added 1 large can of chicken stock, added the chicken and canned carrots and cooked until the entire thing was nice and hot. I added about a 1 1/4 cups of alphabet pasta and let that cook and served with italian bread.. it was really easy and really good!!!
 
I don't know if your tummy would be sensitive to curry seasoning, but one of my favorite left-over chicken recipes is
Curried Chicken over Yellow Rice.

Super easy and quick.
You shred the chicken into bite-sized pieces.
Use a jar or 2 of bottled Chicken gravy (I like Boston Market)
Cook up your rice and put to the side.

Put the gravy in a sauce pan and simmer, add curry powder to taste.
(A little goes a long way.)

Toss the chicken pieces into the curry gravy. Warm it up.

Serve the chicken in gravy over the yellow rice.

A little salad or a veggie on the side and you are good! :)
 
I had this recipe last year and it was for leftover turkey, but would also work with chicken. It's like a chicken salad sandwich that had: mayo, dried cranberries, pistachios and the chicken, some spices and I ate it on a croissant. SOOOOOO YUMMY!
 
shred and mix with bbq sauce and serve on buns

shred and put in skillet throw in some veggies and brown, then mix together soy sauce, water/broth and some kind of thickner like flour or cornstarch pour over chicken/veggies until thick for an easy stir fry to put over rice

chop up small add mayo/miracle whip and have chicken salad

taco seasonings and tortillas

or my favorite shred up mix with rice and broccoli then add in any cream soup base for shicken and rice cassrole (I actually put cheese on mine but you could do it without)
 
Chicken Alfredo, chicken quesadillas, chicken salad, basically anything that would need slices of chicken.

A lot of them sounded yummy but I had to nix because DH can't eat cheese. I'm adding some onto my list though, like the white chili. I've never had white chili before!

I ended up putting them with BBQ and making sandwiches out of them. DH thinks it sounds good, I think it sounds tolerable, lol.
 
I would stir fry it with the leftover rice, a little soy sauce, any veggies you might have and an egg. Yummy, fast and easy!!
 
Sweet and sour chicken? Make the sauce, then add the chicken to warm it an absorb the flavours.

Serve with rice (traditional) or pasta, plus veggies or anything else your family might enjoy. :)
