What can I do with all this leftover pulled pork?

I don't want to any of it to go to waste but can't freeze any of it because my inlaws gave it to us frozen. What else can I do with it besides mixing it with barbecue sauce and put it on buns? It has no sauce or seasonings on it, very plain by itself. Anyone have ideas of a recipe I could use this in?
 
Season some with barbeque sauce and put over a split baked potato, melt cheese over it with a dallop of sour cream -- YUM!!
 

I agree - make tacos. I do this all the time and it's delicious. I just heat a tablespoon of oil in a pan and heat up the meat. I don't add spices to the meat except for salt and pepper.
 
If you cooked it already, you can put it back in the freezer with no problems and just pull it out when you decide you want to use it.
 
It was purchased already cooked and had been frozen and thawed already, so I don't think you are supposed to refreeze meats? Or does that only apply to raw meats?

Maybe we'll do tacos with it. My teenage son would love the over a baked potato idea. Any more ideas?
 
You can refreeze meats. It's a quality issue, not a safety issue (as long as it's done correctly). The more you thaw and refreeze, the more the quality will deteriorate.
 
I buy a bag of frozen oriental style vegetables and a packet of dry stir fry seasoning mix. Try not to thaw the whole amount of meat. I would try to cut sections off the whole amount with a knife or even dip the knife in hot water to get it to cut off some. We are having it this week because I bought a pork roast and the leftovers will go into stir fry.
 
I have made a ragu with leftover pulled pork. I added Italian sausage, onions, red wine, tomatoes, etc.
 
if its pork and it was cooked then frozen and now defrosted if you recook it into something else you can freeze it. Like tamales, empanadas, stirfried rice, or a soup or stew granted I can't think of one with pulled pork but the point is it can be done so long as it hasn't been kept just sitting around at room temperature. Think about it in terms of buying a precooked frozen meat item like say a meat sausage or a bacon etc. You reheat it add it to something else and say freeze the leftovers. Just don't let it sit in the fridge after its thawed cook with it right away and freeze what your not going to use immediately.

pork stir fry
make a sweet & sour sauce, add pulled pork and let simmer in it it then serve over rice.
 
Yep, what everyone else already said, plus white chili.

Also can be mixed with beef and whatever else you have on hand to make meatloaf, but I try to make sure at least half of the meat I put in is beef so that that is the main flavor... come to think of it, you could probably do that (half beef, half pork) for meatballs and salisbury steaks, too... I do it with beef and turkey all the time....

Tamales can be a bit of a chore, but for everyday, try mixing up your leftover pulled pork (also works with leftover chicken or leftover thanksgiving turkey) with some salsa and layer it in a glass pan with prepared maza (quaker makes some that is usually found in the "ethnic foods" section of most grocery stores. Mix it up with broth or chicken bouillon for more flavor than the water they reccomend... anyway, mix that up and layer it maza-filling-maza and bake or microwave until the maza is firm and the filling is hot... 10 minutes in the microwave (glass dish) works great... top with more salsa and you have the easiest "tamales" ever... :)
