What attractions not to miss with a short 3-year old?

My DD is 3 and currently 37 inches without shoes. We're spending one day at Universal and one day at IOA. We also have DS6 who is 49 inches without shoes. I'm trying to figure out how to keep DD3 entertained while we do baby swap with DS6. Which attractions are fun and have no height limit or a very low height limit? Here is what I have compiled so far:

Baby Swap - DD3 can't do, can we baby swap all of these? What is there to do while we wait?
•FJ - castle tour, baby swap
•Dudley Do-Right's Ripsaw Falls
•Popeye & Bluto's Bilge-Rat Barges (Take DD3 to Me Ship Olive?)
• Spider-Man
•Jurassic Park River Adventure - (Take DD3 to Camp Jurassic/Discovery Center?)

•Jaws - no height limit, appropriate? scary?
•E.T. Adventure - DD3 can do this
•Woody Woodpecker's Nuthouse Coaster® - DD3 can do this
•Curious George
•Fievel Playground (is this fun?) Is there a place for parents to sit and watch?
• Shows (Barney? Beetlejuice? Terminator? Animal Actors? Blue Brothers?)

Baby Swap - DD3 can't do, can we baby swap all of these? What is there to do while we wait?

I would not recommend doing Twister or Poseidon's Fury with 3 year old. Both can be very loud at times. Twister doesn't last long, but Poseidon doesnt have an easy escape (other than emergency exits) . Disaster might be the same way. Spoilers:? The car shakes at times (like you're in a natural disaster and lots of water comes at you.)

Camp Jurassic would be a fun thing to do while waiting for Jurassic. Although this ride doesn't take that long to cycle.

Jaws should be fine if you set her on the very inside of a car. As expected you are going through shark infested water... She may get scared but you know her better than us.

Blues Brothers is an outside show. I usually sit on the curb across the street but she might have a fun time dancing long with them. You can come and go as you please. Beetle Juice is an outside arena so you may also come and go- haven't seen in a long time but I don't think there is anything too scary. Animal Actors she would probably love.

Never done childswap so someone else would answer better.

Thank you! We'll skip Poseidon. Don'w want anything long without an easy escape - that sounds like a recipe for disaster Twister, we'll have to play by ear. Ever since the kids watched an exhibit on "natural disasters" at our local science museum, they have gotten fascinated about tornados. We'll make sure to hit the Animal Actors show and sit her on the inside at Jaws.
