What are you doing with your leftovers?

We are making turkey pot pie tonight.

Anybody ever make a turkey/chicken pot pie and freeze it for later? The ones you buy in the grocery store are frozen so I would think this would work, I've just never tried it myself.

The recipe is so easy -

Place the cut up turkey (or chicken) pieces in a pie dish. Add a can of condensed cream of chicken (or mushroom) soup. Then, I make a Bisquick crust (just follow the recipe on the box) and pour it on top. Bake as directed on the Bisquick box.

You could add veggies too, my family prefers the veggies on the side.
 
That sounds good. I don't have any leftovers. We ate out because our son wasn't going to be home this year.
 
I've frozen pot pies, but only ones that I made with a real pie crust. I just roll out a pie crust (or buy one if I'm lazy and they're on sale) and put it in a disposible pie pan. Fill with your filling, then top with another pie crust. Wrap the whole thing in foil and freeze. After it's frozen, pop the whole thing in a large freezer bag (or use heavy duty aluminum foil). I can't remember now if I defrosted it before I baked it or not. I don't think you'd ruin it either way.

A Bisquick one probably would freeze okay, but I'd bake it first.
 
We have a leftovers party!

Add a ham to the mix and a salad and we have a big party!

I know, I know....we're nuts!
 

I sent most of the leftovers home with my dad, who usually exists on microwavable meals. He'll be eating well for a while.

I kept just enough turkey for lunch today. I'm in desserts for quite a while though.

Actually There's nothing like Thanksgiving dinner the day after LOL! We went to me sisters so we didn't have any leftovers but she gave us enough for a dinner and a few sandwiches.

Jenn - We've made the pot pies using the Bisquick recipe. They're good.

I ruined everything so off they all went in a "Glad" bag.....

We always have turkey enchiladas (freeze great if there are any leftover "leftovers", LOL!). Makes a nice change from the turkey and dressing...
 
We just ate ours. They weren't quite as good as yesterday, but still pretty yummy. :D
 
Today we had a "bring your leftovers" potluck at work (we all had to work).

Also, I'm going to try making Jook, a Chinese turkey and rice soup.
 
I chopped up 2 or 3 cups of the turkey, added it to a jar of alfredo sauce and served it over noodles.

Also to 2 or 3 cups, I put it in the crock pot with a can of tomatoes, chopped, 2 cand of chicken broth, a can of small white beans, some leftover corn and a can of green chillis. Makes a great hot soup when we all come in from putting up Christmas lights or getting the tree.

The rest of it gets chopped up and bagged into individual recipe sized ziplock. It gets used when ever I need chopped cooked chicken.
 
Oooh, these recipes sound more exciting than what we do - make turkey salad or just have turkey sandwiches.

Tarheel Tink - what is the recipe for turkey enchiladas? That sounds wonderful!
 
Turkey enchiladas (from memory- I'm at work! Shhhhh!)

2 cups of chopped up turkey (or chicken or any other meat)
1 small onion chopped
1 pound of cheese (I use moderate to sharp cheddar) shredded
1 can of enchilada sauce
1 small can of chili (hot dog variety fine to use)
optional- can of chopped black olives, can of chopped green chilies
about 10-12 tortillas (I have used both corn and flour)

Mix in a non-plastic bowl the enchilada sauce and chili together (stains plastic). Put a small amount in bottom of a casserole dish.
Take a tortilla (will need to soften corn tortillas in microwave or in small amount of oil) and put a spoonful of meat, a small amount of onion (and olives +/- green chilies depending on your family, my DH is not a fan of olives), a spoonful of sauce, and a good handful of cheese in the middle and roll up. Lay in dish and continue until dish is filled. Pour remaining sauce over the top along with a layer of cheese. Since all is cooked, it just needs to be heated until cheese melts. I like to add jalapenos to the top but thats just me!
