If you haven't tried it, call or chat and explain your situation asking if there is anyway you could get into another park for that day so you can park hop later. They might be nice enough to give you an AP reservation for AK or Epcot for the day. Not a guarantee but if you get the right CM, they might give you a little magic. You would need a park hopper for this as someone mentioned earlier

all parks are full the day we will be there.. ugh

Yes, but same principle as above you can keep attempting to make a reservation despite the calendar showing full - try for one person at any of the parks & you should be able to hit one eventually. Just ignore the visible calendar.

I just watched a YouTube of Kyle Pallo. He forgot to make a reservation at Animal Kingdom. He said there were no reservations left. He went to guest services and they got him in. Maybe try that if you don’t get a reservation before.

You might as well try at guest services. If they won't let all three of you go, I'd probably let the two girls go and do something else for the day myself.
