This is for the late night bored crowd. Wanted to make some desserts for tomorrow's party at work. Instead of the usual cookies, thought I'd make a pumpkin roll & cheesecake, both of which I made, not too successfully at Thanksgiving. They tasted ok, but took forever to bake.
So this time I bought the right pans & started out around 9:00. Why so late? Well I saw this pretty sweater that I wanted to stop & get after work & then I had some Snoopy Christmas ornaments to look for. Didn't think I'd be long but lost track of time & remembered I had to make these desserts.
Which one to start with, hmm. I think I'll go with the pumpkin roll first, that only took 15 minutes to bake (actually more like an hour at Thanksgiving but now I have the right pan). So that's cooling, I make the filling then start on the cheesecake.
WHAT? IT TAKES AN HOUR TO BAKE??? Ok, crush up the graham crackers, melt butter, put in new springform pan & bake 5 minutes or until golden brown. Check in 5 minutes, I'll leave in another minute or two. Meanwhile I'm making the filling, 7 eggs, 5 packages of cream cheese, etc. Mixing it all, 1 egg at a time, la de da. Wonder what that smell is. AHHH, 10 minutes later, it's burnt.
Throw out the graham cracker crust & start again, not quite enough crackers now, it'll have to do. Stick it back in only 5 minutes this time. Take out, let cool? No, it's after midnight & it still has to cook 1 hr 10 minutes, cool 2 hours then refrigerate. I have to go to bed sometime.
Five minutes into baking, the smoke alarm sounds. Something spilled, I don't know what. I'm not wasting this stuff. Open windows, put it back in.
So here I am, passing time till I have to take it out. I'd better go check on it. If you've read this far, you must be as bored as me. Wish me luck on these 2 desserts. The pumpkin roll didn't look quite done but it'll have to do too.
The good thing is, people at work will eat anything. I hope. Bye.
