Was going to have leftover Hawaiian chicken meatballs but our sons actually stuck around for the weekend so we had linguica, peppers, onions and zucchini over pasta with marinara sauce.

The 2 year old is toilet learning today so we're just having salads tonight. I'm using the rest of the goat cheese from the other night, adding caramelized pecans, beets and mixed greens. Serving with a champagne vinagrette and some toasted hard rolls with olive oil. It's already been a busy morning. I've never looked forward to nap time more than I have today!

I have a lot to do tonight, so cooking & cleaning the kitchen is out for me. DH picked up fried mushrooms & a pepperoni, mushroom & sliced tomato pizza.

I trade cookbooks with my friends. A friend got this one for Christmas and lent it to me because I don’t eat a lot of meat. If you don’t mind some swearing and are looking to add some meat feee meals to your life it’s worth a look. The recipes are different than a lot I have seen. It is written for a beginning cook but I still enjoyed reading it. I read cookbooks

A few recipes I’m going to try; spiced chickpea wraps with tahini dressing, Vietnamese rice noodle salad, grilled eggplant with soba noodles, coconut lime rice with red beans and mango’s (side), cold citrus noodles with cucumbers and carrots, and peach mint sun tea

Steaks (from the freezer) with smilies (DH wasn't in the mood for baked potatoes so this was quicker and easier and fine by me). Mondays are out busiest day at work so usually shoot for something easy. Dinner was on the table in under 15 minutes. Can't ask for easier than that.

I'm going to see Project Hail Mary with a friend tonight so we're going to grab some dinner. Probably at Yard House. Loved this book, can't wait to see the movie!

Wow....what a bad few days. I could NOT get the Disboards to open at all!! Bad withdrawal!!

Hopefully it stays.

Tonight is Mexican Lasagna, salad and broccoli.
