What’s for Dinner Tonight?

Friday night we ended up at our favorite Thai place, mostly because we were just both so tired, it was late when we left work- 7:30-ish, and I just couldn't fathom cooking dinner and then cleaning the kitchen. The one big thing I've noticed about being older is that I don't have the stamina I did when I was in my 50s and early 60s.

Tonight I think will be ham/leek/asparagus quiche. I had all the ingredients to make it this past week but was never home from work early enough to do the cooking. However, a big quiche will provide about 3 dinners for DH and me, so there will be leftovers for the week. I also have about 1/3rd of a Sam's rotisserie chicken to use up. I think I'll make chicken soup or white chicken chili, which will also provide leftovers for quick week-night dinners. I hate doing take out or going out several nights a week, but honestly I'm so tired some nights that if I didn't have that option we'd probably be eating cold cereal!
 
Our sons are coming home for the weekend to watch the Daytona 500 so I'm going to make a slow cooker pork and green chile stew for tonight. It's tradition in DH's family to have English muffin pizzas during the Daytona race but we're all watching our carbs so we're going to make them with eggplant rounds instead. I made a few last weekend for the Superbowl to see if we liked them and everyone loved them.
 
Happy Valentine’s Day!

I was hoping to make lobster risotto tonight but I went to two stores and neither had lobsters. I ended up getting sea scallops. I think I’ll bake them with a crab stuffing, asparagus, and mashed potatoes.

I grabbed some chocolate covered strawberries so those will probably be dessert. Unless I’m inspired to bake something.
 

Our Valentine’s tradition, since my husband and I both retired from the military and our kids are out of the house, is to have a filet mignon dinner at home.
We didn’t get many of these quiet moments in the first half of our marriage, so this has become a sweet and romantic tradition.
