Some ideas to "change" the turkey... SLice thinly, dice, or chop, then saute in some olive oil with cumin, garlic powder, and chili powder, then use as a taco/burrito/whatever filling.
Slice/dice/chop the turkey, saute in olive oil with garlic powder, basil, and oregano, then mix with spaghetti sauce, serve on pasta.
A favorite around here is Thanksgiving Leftover Supper. Slice the turkey, make a pot of stovetop, some mashed potatoes (I use instant- Idahoan), open some cranberry sauce. Make a packet of turkey gravy (or a can or jar) if you are gravy people. We either do it as a quick dinner or make sandwiches (turkey/stuffing/cranberry). Honestly... you got 2 dinners and a lunch out of it already, and it was free, so you are ahead of the game even if you don't have it again. If you have bones from the turkey, make soup and freeze it. You can get some more mileage out of that bird!
LittleGuy is here for overnight, so we had "Supper Pie," as he calls it- your basic hamburg/creamed corn/mashed potatoes shepards pie. He loves it.
