Some ideas to "change" the turkey... SLice thinly, dice, or chop, then saute in some olive oil with cumin, garlic powder, and chili powder, then use as a taco/burrito/whatever filling.

Slice/dice/chop the turkey, saute in olive oil with garlic powder, basil, and oregano, then mix with spaghetti sauce, serve on pasta.

A favorite around here is Thanksgiving Leftover Supper. Slice the turkey, make a pot of stovetop, some mashed potatoes (I use instant- Idahoan), open some cranberry sauce. Make a packet of turkey gravy (or a can or jar) if you are gravy people. We either do it as a quick dinner or make sandwiches (turkey/stuffing/cranberry). Honestly... you got 2 dinners and a lunch out of it already, and it was free, so you are ahead of the game even if you don't have it again. If you have bones from the turkey, make soup and freeze it. You can get some more mileage out of that bird!

LittleGuy is here for overnight, so we had "Supper Pie," as he calls it- your basic hamburg/creamed corn/mashed potatoes shepards pie. He loves it.

I love the taco/burito idea.

There was so much and I could have sliced up some more if I dug in. I made another plate with mayo for two more sandwiches and froze two portions of sliced turkey with it's juice for two other meals. If I remember to pick up taco shells (soft or hard) next time I shop (I shop every two weeks or so now), I will use your suggestion!!! Thank you.

We had salmon, cauliflower and green beans last night. Tonight we're going out for date night. DH is planning on getting meatloaf and I'm thinking of getting a Korean stir-fry bowl.

With hubby here now, I have to make my supper menu a bit more hearty. So I'm BBQ'n some sirloin burgers tonight. He'll have his with a bun and all the fixin's. I make mine into a hamburger salad. I'll cut up some potatoes for steak fries as a side.

think I will try baked scallops... last time I did not like the recipe I tried (too much butter and panko) so think i will go with a ritz cracker topping and a lemon garlic butter.... with rice and likely some broccoli

@Suger Mag I make a simple stuffing for my shrimp, scallops, and fish

1small sleeve ritz crackers crushed
3 tablespoons butter
1 -2 cloves garlic (depends on the size) minced
1 can crab meat, drained. i usually use the lump crab sold near the canned tuna
1 lemon

Melt butter in sauce pan. Add minced garlic and cook for 1 minute. Pour over crushed cracker. Gently mix in crab.

Use to top scallops, in stuffed shrimp, or on a baked fish.

Squeeze lemon over after cooked.

Nachos tonight. We had tacos the other day and had all the leftovers.

Used the last defrosted boneless pork loin to make a stir fry with BBQ pork, Chinese style. Cleaned out the vegetable bin of everything but the celery.
Love an almost empty fridge!

dh just cut up a small roast I defrosted overnight. half was cut up 'chili' size so i'll start that up in few (ds already requested chili dogs so the hot dogs are defrosting as I type). the other half of the roast is cut up 'stroganoff' size which I will make tonight but no noodles-we will have it as topping for baked potatoes. i'll bake extra potatoes that can be used with either the chili or the stroganoff so plenty of leftovers for the next few days
