What’s for Dinner Tonight?

Last night I made another recipe from the Skinnytaste High Protein cookbook, Shortcut Turkey Meatball Minestrone Soup. It too was very involved like the Mexican Beef soup (despite being labeled "shortcut"). It took over an hour and came out just okay. So far I'm not as impressed with this cookbook as her previous ones. Everything I've made is very time consuming and just tastes okay when I'm done. Definitely not worth the effort they take. Usually her stuff is fairly simple and really delicious. We're having leftover soup tonight.
 
Did you go to National club again? We almost went last night. I have a gift certificate to use there some time.

It was after. I got a gift certificate good at a bunch of New Bedford restaurants and that one is included. I was excited to see it on the list after reading your post.
 
We flew into PWM at 11pm yesterday so stayed overnight. Woke up to SNOW today so we hustled out of the hotel to stay ahead of it. It took 3 hours to make the 2 hour drive and we saw a dozen vehicles off the road (in 3 separate accident areas) but we are home safe and sound. We've been gone 12 days so of course there isn't much food here and I'm not excited about going back out in the snow (predicting about 5"... welcome back to Maine, i guess) so I rummaged thru the freezer. I put some chicken carcasses and veg trimmings on to simmer for the start of a chicken soup (or something) for tomorrow. I then thawed out a quart of chicken tortilla soup from Sam's, doctored it up with cumin, garlic, roasted corn, and black beans, and then served it with cheese, crushed tortilla chips, and dollops of sour cream. A big bowl really hit the spot on this cold afternoon, especially after living on airport food yesterday. While I wish we were still at Disney, it's also good to be home!
