What’s for Dinner Tonight?

DD/SIL/Little Guy are coming for supper. I have a pork tenderloin in the oven, surrounded by diced sweet potato, regular potato, carrots, and onions. Pork is seasoned with garlic and maple syrup, veg with garlic, smoked paprika, and olive oil. I'll make buttered noodles with caraway to go with this. There are brownies that DH and the LG made this afternoon, and gingerbread that DD made yesterday for dessert.
 
We did boxed lasagna one year when we had Covid. It sucked. Not sure DW will like this idea as it's not very traditional. But I can definitely see. May just do a nugget try from Chickfila. Seems festive enough. Or might just bite the bullet and do the traditional Christmas dinner, even though it's super expensive and tedious to spend all afternoon cooking for 2 people where most will end up going in the trash when we get back into town next week.
I hear you! Can’t beat chicken nuggets from Chick Fi La, especially if you get the sauce to dip. 🤣

It’s become a tradition for me to make a buffalo chicken lasagna, meatballs, Italian sausage and garlic bread for Christmas Eve. It’s just DH and I and our 2 sons. On Christmas Day my parents come over brunch. Mom makes quiche and monkey bread. I make a tater tot breakfast casserole from Pioneer Woman and usually something else that’s sweet. This year I’m making a cinnamon roll bake that’s also from Pioneer Woman.

We've only lived away from family for 3 years now. So really new to this stuff. Last year, we made a ham, green bean casserole and corn casserole, bread and dessert on Christmas Eve then joined friends at Saltgrass on Christmas Day. We didn't have to pay anything for that as we had stacked rewards. We've done the same this year, and we have a reservation with the same friends. So we might do that since it won't cost anything.

But we're not sure about Christmas Eve. We've been invited over to another friend's house. But they want us there at 5, and we're planning on Christmas Eve service at church at 5. So we might have to forgo their house. And DW has said over and over again that she's not making a lasagna ever again. Last time she made one, it took forever and didn't turn out very good. She said never again.

We might just get another ham and stuff to cook. I just hate the idea of spending $90 like we did at Thanksgiving. The good thing is we were able to eat leftovers for a couple of days. But we're heading out of town Saturday morning, so we'll only have 1 day to eat whatever leftovers without having to throw them out. So that's why we're trying to explore some options.
Do you eat seafood? Feast of the Seven Fishes is a Christmas eve tradition in Mediterranean cultures (I learned about it from Portuguese friends but Google shows it to be an Italian tradition), so we do some sort of seafood on Christmas eve. When we were part of a large family, there would indeed be seven different types of fish. Now that it's just DH and me, we usually do shrimp or scallops (although if I want to keep to the 7 fish tradition, sometimes I'll make seafood chowder). If you like shrimp, scampi is easy to make. I usually buy a 1lb bag of frozen, raw medium shrimp at the grocery store to use (doesn't matter if they have the tails on them or not). Make just enough for two so there aren't any leftovers, and get a nice baguette to go with it, and a light salad (a homemade lemon vinaigrette on some crunchy baby lettuce is really nice with scampi). I can get the frozen shrimp for about $7 a bag.

Due to DH's work, we had to drive all the way to DS's yesterday (12+ hours). We were too tired to stop to eat. Fortunately, we got to the local grocery store right before they closed & picked up a quiche to heat in the oven.

Tonight I made 15 bean soup & cornbread.

All of the talk of Christmas Eve & Christmas Day meals is stressing me out even more. I have no clue what we're bringing to our extended family Christmas on Christmas Eve nor do I know what my family is having for Christmas dinner. I don't even have any of the gifts bought for Christmas Eve & I have 19 people to buy for. :eek: I need all of the pixie dust you can send me. :o
 
Yesterday, I drilled into the reality that this is my life and I better make the best of it.
Rolled into a butcher shop, held fast to my principles ( if it’s good enough for them, it’s certainly fine for me) and ordered a first cut, aged prime single rib roast. Was lucky enough to get a butcher who knew me and we laughed about old times. That meat cut will be consumed on CD as prime rib with mashed potato and leeks, and sautéed green beans.
Then off to the fishmonger’s where I bought a scant handful of shrimp and scallops for my CE dinner which like others is fish based. I’ll serve that as a shrimp, seared scallops and white beans with garlic stew. A side of kale salad should give me much loved greens. Still some details to workout but I’ve the start.

Last night I cleaned out the fruit portion of the vegetable crisper making a salad of grapes, blueberries and kiwi and coconut flakes. Ate it with a bit of Manchego cheese for protein.

And DW has said over and over again that she's not making a lasagna ever again. Last time she made one, it took forever and didn't turn out very good. She said never again.

That casserole @evilmommie posted has a similar taste profile to lasagna, is quick to make and easy to store leftovers in the freezer. More cost effective than lasagna too! I sent my version‘s recipe to granddaughter so she could feed all her school friends over the holidays.

Thinking of making a turkey dinner tonight. We usually do turkey for Christmas Day dinner, but got invited to friends’ house this year. We still picked up a small turkey to cook sometime this week.

Christmas Eve, we go next door to our neighbors for brunch in the morning, then invite them over for our Christmas Eve dinner (standing rib roast).

Saturday is my family’s gathering. My mom has not been able to make her usual recipes so my siblings and I have been busy making everything for the meal. My brother making gnocchi, my sister making ham and sweet potatoes and I made my mom’s manicotti. It’s been a hard year with my Dad now in assisted living and my mom having multiple injuries, like a broken wrist.
 
We were supposed to get a snow storm so I planned to finish my wrapping and can 12 jars of tomato sauce before I switch back to baking.

We didn’t get any snow but my wrapping is done and I have enough sauce for everyone for the holidays (my mom and bff both asked for some).

I’m debating baking something but not sure what. I need inspiration 😂

I’m making tacos for dinner tonight. Ground beef for DH and black bean for me.
