Last night we went to Mom & Dad's house for dinner with my brother & his daughters who are visiting from NJ. Mom made baked chicken with fingerling potatoes. Tonight DH & I ate salmon, squash, and sweet potatoes at home before going back to Mom & Dad's to watch the Sox with my brother's family. We usually have salmon twice a week but since I started posting on this thread, it feels like I'm constantly eating salmon, haha! Tomorrow night we are going out for Thai food with Mom, Dad, my brother & his girls. Unfortunately our two sons are unavailable to come due to prior plans they couldn't change.

Woke up yesterday morning and finally figured out how to use the fresh tomato sauce I made but didn’t particularly care for - added some Italian sweet sausage, a mirepoix of carrots, onions and celery, a little wine and it became a sausage ragu.

Poured some sauce on rigatoni, made a green salad and dinner was done.

Went to a friends for her closing of the pool party. I did not go in, it was only 70 today and her pool was 62 degrees.

We had Cesar salad cups, tomato and mozzarella salad, veggie tray, grilled chicken, steak, corn, potato salad, and apple cupcakes, and peanut butter and chocolate cupcakes

I made the Cesar salad cups

Tonight I made eggplant parm, chicken parm for the meat-lovers, spaghetti and garlic bread. It was my first time making eggplant parm and I was very happy with how it turned out.
I had a bunch of bananas to use up so I made some peanut butter/banana muffins and banana chocolate chip streusel muffins.

A Beefeater sandwich, beef au jus, gumbo, chips, an ice cream sundae and water from Jason's Deli. Next best thing to Disney's Port Orleans Resort!

Made a ratatouille and Parm omelette as a way to use up the last of the eggs and remaining quart bag of “rats” in the fridge. Made some garlic crostini to go with it.
Two more clementines for dessert.

Actually it was a little cooler than I would’ve liked. We had it at my house bc it wasn’t warm enough to go in the pool.
It was a little disappointing

Edit: But it was a great day with family and friends. My family has always celebrated my birthday on Labor Day weekend. For my b-day my sister brought a cake, my MIL brought my favorite lemon dessert, and my friend brought a 5lb apple pie from a local restaurant that is famous for desserts.
They were all delicious!!

It was definitely a fall-like day. Glad you had a great celebration for your birthday! Happy Birthday . Also what is this mysterious local restaurant famous for desserts? Is it Gregg's? Sounds like lots of delicious desserts!

Haha! We know our local desserts! A former co-worker of DH's introduced him to the Death By Chocolate cake from Gregg's. While I always bake our cakes for birthdays, we have been known to pick up a Gregg's cake from time to time for DH for Father's Day. Everything looks so good there!
