What’s for Dinner Tonight?

Today was a tomato buying extravaganza at the farmers’ market. Bought about 8 lbs of different varieties and used them to make tomato confit (slow and low tomatoes braised in olive oil) and a sauce made from fresh fruit with only butter and halved onions. I’ve made the sauce in the past using imported canned tomatoes with great success but tried using fresh this time. Think I may have to add something to it but will wait until a mellower taste develops tomorrow to be sure.

Dinner was a cod filet pan sautéed with olives and leeks and a cup of defrosted broccoli purée soup. A mini peach cobbler with cream for dessert.
 

So it’s actually chilly and rainy here only 57 degrees. 😳Well probably not chilly, but it was 105 the past few days for me and so yeah I’m cold today! Haha
The only thing I have defrosted is kielbasa (since DS didn’t cook it while we were away) so we’re having pierogies with that and a salad.

Yes, you did. Feels like fall today - brr!

Made an artichoke, tomato and pea pasta salad with lemon chicken today. Lots of fresh dill, mint and parsley in the dressing to give it a Mediterranean/ Greek taste. Some leftover feta cheese so added it in as well.
Unfortunately, no more cukes in the house so did without; maybe the weather will be more conducive for going to the store tomorrow.

Have a cup of vanilla yogurt so that and a sliced peach will be dessert.
 
Leftover Greek salad today with the cucumber added. Have a bit of fruit left and decided to make some desserts with it.
Found a recipe for strawberry spoon bread that looks easy and fast. All this seafood shack talk got me thinking about New England cuisine and I decided to try making hermit bars this week. Reading about 4 different recipes and it’s interesting how similar the ingredient lists are.
I’ll see who “wins” by this afternoon.

*EDIT TO RECIPE* Easier and more cost efficient to use canned tomatoes to make Marcella Hazan’s tomato sauce unless you grow produce yourself and need to use excess. Had to triple tomatoes to get enough for one pound of pasta. Taste not worth it.
