What’s for Dinner Tonight?

Supper tonight will be "Big Sandwiches," as the Little Guy calls them, basically make-your-own Italian subs. We are driving 3 hours to check in at our beach-side rental cottage today so I am trying to get ready. I'm packed, DH has his clothes laid out but isn't packed, only showered. I, OTOH, haven't showered yet. Once we are both dressed, we'll pack the coolers, load the car, and hit the road. The 2003 CRV started making funny noises this week so we are opting to take the little car. Hopefully the 3 of us and all our studd will fit into the Kia Soul! 🤞🤞🤞
I hope you have a wonderful vacation!

Last night we shared Foie Gras, Pâté, Pappardelle & Mushroom (entree) & Raspberry Cheesecake paired with a 6 grape port.

Tonight is to be determined. I may try to work in the pasta that we couldn't eat last night, because DH really wanted to save room for dessert. His eyes were bigger than our stomachs. :sad2:

Today was shack day! We tried The Dock. This one was located on the Niantic River right where it meets the Sound. Water is brackish.

I had lobster bisque. It was delicious with large chunks of lobster and temperature wise it was hot!

I followed that with scallops. They were fried perfectly but not as sweet as I had hoped.

I enjoyed a blackberry and strawberry daiquiri

And we shared fried Oreos, which DH loves and only usually gets at fairs.

Overall really good and I would absolutely go back. I would say of all the shacks we have tried this is my second favorite. I am excluding The Place from these rankings because it’s not really a shack. If I include it I would bump The Dock to 3rd. Costello is #1 for all 4 of us. Will anyone knock it off? We’ve got a few more weeks to go so we will see!

It was cool enough today to have the oven on so I made lasagna. It's a real winner with DH and DS but it's more labour-intensive than I prefer. Turned out great, although for my personal taste, I'm going to use plain mozzarella on top next time instead of Italian blend cheese. The asiago and shredded parmesan didn't melt as well as I would have liked.

We're headed out for a couple of days.
When we do this we just buy frozen food and eat in our room.
We will shop on the way, so not sure yet what dinner will be.
I know tomorrow we will go to a movie, otherwise it is stay in the room, read, watch movies and relax

My sons and I were supposed to fishing with my parents today so I was hoping we were having fish for dinner. Unfortunately the ocean is too choppy for dad's boat. So, mom is making eggplant parm and tomato basil pie from her garden and we're all headed there for dinner instead.

@LoveDaisy that blackberry/strawberry daiquiri looks amazing!!

Last night I made stir-fry rice bowls with the leftover protein I had in the fridge. They were yummy! 🍲

Not sure about tonight’s dinner. We’re headed out for a little Mickey fix, so it might be take out on the way back home. 🏰🐭

Happy Sunday, y’all! 🤩

Looks really good! Those dishes are certainly the perfect quick service items that would fit Disney’s Beach Club resort.

Fried chicken, fries, green beans, a biscuit, sweet potato pie, and lemonade from a REAL Bojangles… not those fake Bojangles that they’re opening in other parts of the country that don’t serve bone in fried chicken or green beans.

We don't have them in the Hudson Valley. 🥺
