What’s for Dinner Tonight?

We're in supposedly the last day of about 2 weeks of extreme heat. And that is hot here.....over 110.
It should be 106 tomorrow :rotfl:
Had to wait outside when picking the kids up after school today. It was brutal.
They are asking for an early dinner, so going to get the grill hot and turn on the oven.
 

Another day of picking kids up from school.....back to sitting in the car (at least that is cooler than standing outside like yesterday) and waiting in the long line of cars.

Breakfast for dinner tonight. Pancakes, bacon, sausage, scrambled eggs and grapes. DGS will be happy to not have to eat vegetables tonight

Tonight will be homemade chicken and broccoli stir fry with white rice.

Left over chocolate mousse double layer chocolate cake. Left over because it was supposed to be for last night, but by the time our son got home from work, then the gym, a shower, my wife and I already ate and it was now after 8pm. He had a slice, but I wasn't about to eat a piece that late.
 
His birthday is actually in March. Today is the day he came home for the first time. He was about 4.5 months old when he came home and when we adopted him. Today has always been a special day for us, and we always celebrate it.
Saturday is Gotcha Day for us... my niece has been part of our family for 24 years now, came to us from China when she was 13 months old. She's also my godchild.
 
I am way too far behind to catch up. Emotional and physical struggles, to say nothing of the heat, have made the past week a blur. However, today the heat is supposed to break, meaning it'll be in the mid-80s instead of mid-90s. It's raining now, so hopefully that'll be a good thing, too. Last night we tried to go out to eat but every restaurant in town that has a/c was full (OK, I live in a small college town, so not a lot of options) so we came home and had bag salad and rotisserie chicken made up as bowls or wraps.

Not sure about tonight and tomorrow; they will both be heat-dependent, as it's too damned hot to cook much in a house without a/c. The Little Guy will be here both nights, with his parents joining us tomorrow for DH's birthday. Then on Saturday, we all take off for vacation: DD and SIL to WDW, DH, LG, and myself to a beach cottage. I don't want to cook a lot before then. I have some chicken soup and there is the leftover rotisserie chicken from last night, so I'll do some sort of riff on both of these. Maybe some sort of pasta dish with the rotisserie chicken, and I'll thicken up the chicken soup to make stew or something. Both sound hot and heavy but it's food that needs to be consumed (or frozen) before we leave for a week on Saturday. Not inspired...
 
Not cooking for a few days!!
We leave for WDW this afternoon. I’m planning on having something to eat at Epcot for dinner since DH got LLs for Guardians tonight! 😍

We're going to Universal Orlando in Oct. (fall break). DD's idea. We have a dragon obsessed grand daughter and a Mario obsessed grandson. They didn't want to wait for a side trip when we go to Disney World next year. I got talked into going too.....haven't been to Universal in over 10 years.
5 of us going.....so I can have my time. DS and DD can deal with the kids
 
I am going to HH at a local vineyard for a coworkers 40th anniversary tonight. I’m stopping at a farmers market on my way home from the office so DH will most likely have a pesto, mozzarella, and tomato sandwich with refrigerator pickles for dinner.

Last week I bought so much at this market I bruised my arm carrying it all. Wish me luck! 😂

Just finishing dinner - we are all doing some version of intermittant fasting, and 3/4 of us having "things" going on tonight, so a 3pm dinner it is.

BLTs (mine on low carb tortilla, cheese instead of bacon), sliced cucumbers from the farmers market, cottage cheese, and then my older son picked up some potato salad from the store today, so served that, too. Quick, easy summer meal.
 
DH is making a cheeseburger for himself with sauteed onions and pickles. I've been having a grazing dinner LOL....half a toasted bagel, string cheese, a bit of turkey cold cuts...basically whatever strikes my fancy whenever I get up and pass through the kitchen.

FYI: In case this helps someone else as I just started doing this the past few years. DH loves sauteed onions and I do not. He never wants to make one and buying one onion at the supermarket is the same as buying a 3lb. bag at Aldi. So every couple of months I get the 3lb. bag and sautee/caramelize all 3lbs. Let them cool and then put them in little snack bags and freeze. Then DH can take a bag out and let it defrost or not and just heat them up in a pan whenever he's eating something he wants with onions. Works great and he gets his onions and just doing it every couple/3 months makes it not an annoying task.
 
The soup went into the freezer and we are having leftover rotisserie chicken with rice and frozen broccoli. That takes care of a bunch of leftovers. I hate to throw things out but they definitely won't keep while we are away on vacation.
