I added the leftover country style pork ribs and zucchini to a bag of Trader Joe's cauliflower fried rice and made our own fried rice bowls. It was quick and easy and came out pretty good!
My hubby “made dinner” tonight again. Hahahah.
I saw him come into the house around 4pm, while I was helping out my friend. On the Ring camera I saw him with a Lucille’s bag— local BBQ place.
BBQ chicken chopped salad for me & pulled pork sandwich for him.
I agree. One of our local restaurants serves my favorite salad. (Roasted Beets, Mandarin Oranges, Mixed Greens, Candied Walnuts, Goat Cheese, and Balsamic Vinaigrette) It's kind of like eating dessert & calling it salad, but it's delicious.
Picking up grand kids again (what a nightmare that was......line was long. It took 35 minutes to get them).
Making Orange chicken, rice noodles, some kind of vegetable and a salad for me (I don't eat noodles).
Tonight will be cheese burgers on brioche buns. Toppings will range from the usual condiments (ketchup, mustard, mayo), lettuce and sliced tomato and I may top mine with a fried egg.
Going to saute some peppers, onions, and chicken then simmer in some salsa with corn and black beans. Also going to roast some cauliflower. I need to go grocery shopping so it's a night to use what I have on hand.
Farmers’ market was beautiful today. Needed so much we made 2 trips. Some tomatoes , zukes, eggplant and 2 varieties of peppers means time to make the ratatouille and tomato confit. Bought 20 ears of corn for frozen corn kernels and corn broth. Finally, a container of chestnut and oyster mushrooms to freeze for Thanksgiving. Also bought some peaches just because.
Probably will take until Friday to finish making everything when I factor in med appts so thank goodness for the a/c.
No idea if I’ll eat anything tonight. Sometimes when I look at a lot of food I’m just not hungry; we’ll see.
There's a local restaurant here that has tater tots as an option (fries, onion rings or tater tots), and I always get the tater tots! I love tater tots!!! Might sound weird, but they aren't offered at most restaurants (plenty to had in the frozen food section though).
The plan was eggplant parm but my dad is stopping by later and I need to make pesto (so much basil) so DH is going to throw chicken on the grill and I’ll make a big salad to serve it on. Hopefully eggplant tomorrow!
Let my home attendant whine me into making dinner after all (all these people who think they’re the boss of me, lol).
Wasn’t that difficult when I thought on it: fastest protein for me to defrost was shrimp and just used a handful of veggies I’d already cut up earlier in the day. Had some unused herbs plus a scallion so I made a never to be repeated shrimp + veggie stir fry.
