What’s for Dinner Tonight?


We had seabass and scup I caught today while fishing with my parents off the coast of Martha's Vineyard. I breaded and lightly fried it. I served it with instant pot green beans and leftover eggplant rounds.
I had never heard of scup, so I looked it up. Sounds good. We'll have to look for it on a menu the next time were up north.
 
Oh well, I guess that's why I've never heard of it. We'll just have to stop by your house for dinner the next time we're up there. :laughing:
Well you're most welcome to stop by but considering this is the fourth time I've gone fishing this summer and the first time we actually caught anything large enough to keep (and only 4 total fish at that), I wouldn't go booking a trip quite yet. Haha!

Monday night- gosh, was that only yesterday? Everyone worked late; it was probably 7:45 by the time DH got home. I took the leftover chicken burrito filling (chicken, onions, peppers, rice), added black beans, scattered it over tortilla chips and covered wtih shredded cheese, then popped it into the oven for nachos. We got pretty good mileage out of a $5 Sam's rotisserie chicken. We had sliced chicken one night, chicken chunks with peppers and onions over rice (savory seasonings) for the second meal, chicken burritos (prior chicken mix with chili powder, cumin, garlic), and finally chicken nachos. I think DH had a sliced chicken sandwich too.

Tonight we went out to a local brewery to play trivia, so I had a burger and DH had curried rice noodles with chicken. He finished my burger but has enough noodles for at least one lunch.
 
"Creamy Turkey Patties" which is basically a lighter version of salisbury steak made with ground turkey with mashed cauliflower and leftover green beans
