What’s for Dinner Tonight?

My husband hasn’t made good on his promise to make dinner when I’m helping my friend out all day on Mondays. So I made it easy on him when I got home and said let’s just grab a quick bite and sit outside down the street. He had a pulled pork sandwich and I had the house salad with a cup of house smoked Tri tip chili. ⛳

Saturday night we stopped in Savannah, GA in transit. Walking around, we happened upon a Tapas restaurant that had an appealing menu. Good choice! The atmosphere was great, as was the food. We had Citrus Shrimp Ceviche, Poached Halibut w/basmatic rice & snow peas & DH added Lamb Lollipops for him. The halibut was in the top 5 of dishes we've ever had.

Sunday, we arrived at our hotel totally wiped up from a long day of travel. We weren't feeling going out for dinner, so we ordered from the hotel restaurant. Shrimp Cocktail, Seared Tuna Nachos & Wagyu sliders w/ fries. DH ate the sliders & fries. The nachos weren't the best. I mostly ate the tuna & seaweed & picked around the rest. We had the shrimp cocktail for a snack today.

Tonight, we went to a French restaurant. Our appetizer was a Lobster, Avocado, Mandarin Orange Stack. Unfortunately, our server talked us into the Halibut, Lobster Mashed Potatoes & Sauteed Spinach special. It was okay, but paled in comparison to the halibut that we had Saturday. The meal as a whole was a disappointment, so we decided to finish with dessert. We ordered the special (Raspberry Cheesecake w/ vanilla ice cream) & added a Graham's 6 Grapes Port to share. The dessert was the clear winner. We feel like we need a do-over for the rest, so we plan to return Wednesday evening to order off the regular menu. I'm thinking I'll just throw the diet out the window for that meal & order what they should be really good at.
 
Busy day.
Back to back therapy appointments this morning. The occupational therapist was the same one I always have but decided I need a new cast for my wrist. She’ll have a special treat when I return for my pinky; who knew how important your pinky is?! Meanwhile the physical therapist is new and obviously has points to make. I don’t regret the attention but oh dear, I can still feel it. He thinks (and I agree) that my gait can be repaired (?) with exercises instead of a brace; hope he right.

Off to WDW tonight so it was a simple dinner of frozen goods and leftovers. Had a bowl of Thai chicken soup with fresh radish slices and spinach added. Took care of some of the leftovers as well as the rest of the watermelon for dessert.

Decided to bring a few noshs with us so I put together some charcuterie items for a sitting on the terrace snack along with an Aperol and rum cocktail base that I’ll add prosecco to on site. Some croissants and yogurt for mornings and done.

That's good news about your gait. The new physical therapist may be just what you need.

Got into the hotel around 11:30, switched into our bathing suits and off to Typhoon Lagoon. Splashed around until about 4:30 then when we switched buses at DS grabbed some takeout at Polite Pig.
Maybe too tired to eat but at least it’s here. Got a side of slaw and watermelon salad as well.

Our appetizer was Burrata Mangiafico (Crostini topped with Shaved Prosciutto, Arugula, Creamy Mozzarella, Imported Fig Jam, Olive Oil & Fig Balsamic Glaze) minus the crostini, fig jam & fig glaze for me. We shared two cups of soup (pasta e fagioli & Italian wedding). Our entree was a pasta dish prepared tableside w/ a whole story behind it. It was a really heavy dish, but a fun experience.
 
Tonight is supposed to be leftover chicken and peppers. Monday I served it with rice. I think tonight I'll season it up, add a can of tomatoes/tomato sauce, and serve it over pasta with salad. I'd thought maybe I'd mix the chicken and pasta and bake it with ricotta (and I might) but it's supposed to be in the high 80s/low 90s today, so I'm not sure I want to fire up the oven. Seems easy enough, whichever I choose.
