What’s for Dinner Tonight?

I'd love to have an herb garden. Fresh herbs are so expensive.
Wish we were neighbors, I would share!!! My neighbors get all of my herbs this time of year…the garden goes crazy. The gal next-door to me, makes beautiful sourdough bread and she uses all of the herbs I grow! She brought me over a loaf last week with fresh chive butter. *swoon*

I was supposed to have jury duty today but it was canceled. I decided to work from home since I had no meetings. Around 9 I went outside to cut herbs to make an herb cream cheese spread for my lunch, a cucumber sandwich. A snake slithered by me. I screamed and dropped the chives. Not my bravest moment. 😬cucumber sandwich was great!
 

Last night was pizza when we finally got home from our travels. Neither DH nor I felt like really eating much. We'd had lunch at a class get-together and a 4 hour drive home; we were just beat, so we shared a small sausage and green pepper pizza.

I'm supposed to be accomplishing things today but I am overwhelmed, feeling nauseous and shaky. I think I'm just overtired from travel and all the driving yesterday (375 miles). I'm going to see what's in the kitchen/freezer, but I think we are looking at party meatballs and rice, maybe a can of peas or some frozen broccoli.

Saw a great exhibit of artworks from 1840 to 1940 at the MoMA followed by lunch at an on site restaurant. I had charcoal grilled king salmon, fava beans and beluga lentils; lovely to eat without cooking it, lol. Had a nice half bottle of Grenache with my meal instead of dessert. Which probably explains why I’m taking my evening meds with mango gelato now😋.
 
I think leftovers or a sandwich. I ended up grilling a good amount of ahi last night. Had that for lunch as well today..over arugula & romaine, garden toms, cucumbers, avocado and some leftover rice. I'm still full. But, I know that come 5pm by beloved husband will come down from his office and start poking around in the pantry. Mhmmmm....
 
We are trying to make it without hitting up the grocery store this week since I've been on unpaid leave recuperating. I had an ensure for dinner, but I had a bigger usual breakfast and lunch so that was fine. DH had a frozen French bread pizza. We have food in the freezer and pantry. It just may not what we feel like eating, but we are definitely not ordering take-out at all and a week without the grocery store is not a bad thing. We'll make it work.
 
I am feeling a LOT better today so back on schedule! The Little Guy is coming for dinner and overnight tonight. We'll have teriyaki pork tenderloin on the grill, veggie fried rice (courtesy of Trader Joe's) and probably broccoli as that's a favorite of the LG. Tomorrow morning I'll make chocolate chip pancakes with sausage for him, then take him to day camp. He is going to the local Y camp and loves it!
 
Tonight my DH is driving to Florida with a friend of ours that’s moving down there (so jealous). He’ll be there until Tuesday bc our condo needs a new dishwasher and faucet, so the plumber is coming Monday.
Why didn’t I go you may ask. Well my mom needs help with my dad who had a major stroke 3 years ago. I just got back from Disney and going again in 3 weeks so the guilt was there. Sorry for so much information. 🤣
Back to dinner for tonight- my Portuguese aunt used to make bolinhos de bacalhau (cod fish cakes) at Christmas. I found some frozen ones at the grocery store ❤️ so I’m going to have them tonight probably with butternut squash since DH isn’t a fan of either.
