What’s for Dinner Tonight?

Returned from vacation last night.....so tired. Taking 2 kids is hard work!!
DH went and picked up Red Robin for us after I got the kids things sorted out and DIL came and picked them up.

Tonight I am planning on making Wiener Kraut, but that could change by the time I go grocery shopping, unpack, do laundry and change 4 beds here (from them spending the nights before the cruise)....but we had a great time
 
We are on Royal Caribbean Symphony of the Seas. Since it’s his birthday we did the dining package and are checking out all the specialty restaurants.
RCL was our first mega ship!
I think it was called the Oasis of the Sea but really need to check some of our vac pictures to be sure. We were docked on a Celebrity ship next to it and in awe of the amazing size, comparatively.
We took a few RCL cruises and decided that despite the many advantages we had a personal preference for smaller ships.
Have fun cruising!

Ate the last of the asparagus soup solo; too humid for much more on this end.
Still, I was able to demolish a mango for dessert😉
 

WE FINALLY ATE OUR LEFTOVERS LAST NIGHT! Made the meatballs on June 2nd, but they were still OK.

Tonight? It's chilly here today, so I'm going to grill a steak and bake some potatoes. Salad, veg? Yes, but not sure what.

EDIT: I fell asleep this afternoon and when I woke up it was too late to bake potatoes. Opted for Trader Joe's frozen pesto pasta with tomatoes, and our roommate had diced up a ton of cukes so we had those on the side. Steak was great!

Good timing-I was just looking at pics from the meal (Sorry, DGD, you need some food pic lessons ❤️) and decided a word picture would be more descriptive, lol.

Fortunately, we booked an ADR on one of the 40% off days and despite a long and winding road trip to get from BW to Coronado (somehow I thought we were going to the Rivera, duhhh!) , we were only 15 minutes late and sat down in the middle of a fireworks display. The view is not as up close and focused as CG but still awe inspiring. We started with drinks, a pomegranate and elderflower mocktail for the person who’s old enough to drink in France but not the US. I opted for a white sangria which was nice but not quite up to Jaleo’s. Keep in mind that Jaleo is one of my favorite Disney eateries so Toledo had some living up to do. I stopped ordering dishes we’d eaten in DS ultimately to make it a “ fair fight”. Didn’t happen until after the appetizers though and we ordered 3: the shrimps in garlic oil, the olives and the romaine salad. The shrimps were plump, probably poached and then tossed in the garlicky oil, the olives were a nice combination of different varieties and the salad had just the right touch of Manchego cheese and greens.

Next we shared a chuelto ribeye steak for two which was beautifully cooked with just enough fat to give some pieces an extra meaty taste. It was too much meat for us to eat in one seating so we doggy bagged most of it back to our studio. Made for a nice steak salad the next day.
The steak came with 2 sides and the gigante beans should not be missed; phenomenal!
Too full for dessert regretfully but had a convo with a nearby (but not too near) table and they loved theirs as well as the chicken and filet of beef they had for dinner.
I plan to return even without the AP discount 🙂↕️

This is our first time on a mega ship. I like all the food options on this ship, but I do like the smaller ships. We were on Anthem last year and I think I prefer the ship size and layout but I have to say the food on this ship has been fantastic!
 
Today we went to coco cay (RC’s private island). We opted to skip breakfast because it’s been a lot of food and we wanted to get off the ship early and enjoy the island before the peak of the day sun.

Lunch on the island: black bean taco with fruit. DH had one pork and one steak taco.
Snack: funnel cake
Drinks: Coco cay signature frozen drink. I would guess it was pineapple, guava, and rum.
Dinner: Lobster bisque, spicy shrimp with mashed potatoes, and asparagus. Raspberry sorbet for dessert. I had the one of the restaurants signature drinks, it was a grapefruit sparkler.

I think we are tapping out early, the sun and heat drained us.

Sadly only 2 more days (both at sea). My stomach is probably relieved it’s only 2 more days 😂
