Ahhh, thank you for this inspiration. I had a cream of asparagus soup several years ago that was so heavenly I've been on a quest to reproduce it ever since. I've got 7 or 8 spears of asparagus left over from supper last night - just enough for another little single-serving R&D experiment! I almost never put away left-overs but now I'm so glad I did!
Breakfast: omelet, hash browns and fruit with frozen mudslides
Lunch: Cesar salad with white wine
Dinner: shrimp cocktail, lobster with veggies, coconut cream pie with French martinis
Post dinner drinks: French martinis
Dh smoked a pork butt today. He also made an assortment of homemade bbq sauces. I used a pretzel roll for my sandwich with the Carolina style sauce. Served that with a pasta salad.
Last night we had family cookout dinner. My mom brought the burgers and hot dogs and my sister brought corn on the cob and homemade potato salad. Since it’s at my house and DH did the grilling we just got the rolls.
We've been trying to finish up some leftovers for almost a week, but we keep going out, meeting up with friends, etc. DH finished the american chop suey casserole (it was over a week old...) for lunches over the weekend, so that's good. Tonight we will have last Tuesday's meatballs in mushroom gravy. I'm going to stretch it with a bit more beef broth and some sour cream to make it more like Swedish meatballs. I'll serve it over noodles with a salad. No idea what the rest of the week looks like but I have to go to Sam's today so it's a safe bet that there will be some iteration of rotisserie chicken on my menu!
I had to cut back on food today! It’s been crazy. We opted for brunch to cut out a meal.
Brunch: fruit platter and cherry stuffed French toast
Dinner: we had hibachi. Edamame, fried rice, veggies, lobster and scallops with assorted mochi for dessert.
Snack: Dole whip.
We had burgers. Tried to grill them but they were a pretty fatty 70/30 mix and fire flared up so badly, we had to move them to the oven at 400. I wasn’t cooking those on the stovetop. They were very good. Super juicy and flavorful. Just wish they could have been made outside. Served that with the leftover pasta salad from yesterday, some cheesy rice from a package to supplement and corn. (In my world, corn is still a vegetable like green beans or peas.)
