This sounds tasty!Ole Polenta Casserole......layers of polenta with ground beef mixed with onions, green bell peppers, tomato sauce, garlic, oregano, basil, Mozzarella and Parmesan.
Baked.....probably with a green salad, depending what time I get home from a visit to a notary.
Starting tomorrow for a few evenings, the grand kids will be here after school and for dinner while DIL is out of town, the menu has changed

DH ordered fries & fried okra with his. DS ordered potato salad & fried okra. I had a turkey Cobb salad. We added a piece of peanut butter chocolate cake & banana pudding to share. No one has gotten to the banana pudding yet. Maybe, tonight.
Yesterday - We had to cancel our weekend plans, due to the lousy weather wreaking havoc on my health. Knowing it's my favorite cuisine, DH & DS went out to pick up pork bao buns & 5 sushi rolls to bring back to the house. Small(ish) town North Carolina isn't the best place to order sushi, but it was a sweet idea.
Mother Nature isn't my friend again today, so tonight is up in the air. I'll return later to post what we have.
Congrats to your niece.Tonight was the local Carrabba's . We had been away on vacation to Vegas & Honolulu ( our Niece's graduation ). So 2morrow it is back to cooking.
They sell this cheese (and the brand, all their cheese are great) At Whole Foods if you have near you. I got it through my dairy delivery but I’ve seen it at Whole Foods. If you are ever in CT they have two dairy stores. I highly recommend, their ice cream is dreamy!

Thanks. There's an Amish store near here. I'll have to see, if they have it, the next time we come to visit.I get it at an Amish store. I will say, it's an apt description of it! I think it's best when melted or broiled on some kind of good bread.
