What’s for Dinner Tonight?


Wretched weather here so I just pulled some broccoli cheddar soup I made previously out of the freezer. Will make small salad to go with it. DH and I usually go out on Friday night but it is so miserable out we don’t want to go anywhere.

My day started early with an 8 am transport appt to the doctor’s office. Lots of medical tests that I’ll get the results of next week.
Somewhat exhilarating, somewhat exhausting but I’m definitely too lazy to do more than heat up some more soup.
So tonight it’ll be another bowl of chicken pot pie soup whenever I can get the wheels rolling to hit the kitchen. Should have heeded my home attendant’s advice and let her do it but now she’s gone for the day. I’ll creep along eventually, lol.
 
Once again, I'm playing catch-up. I really need to practice my cell phone, typing skills. :blush:

Friday - DH & I went to visit my sister who isn't doing well. We picked up burgers & fries at a nostalgic restaurant from my youth to take to her house. She also wanted some banana pudding from Ingles (grocery store), so we picked that up too.

Saturday was my actual birthday. DH & DS's original plan was rained out, so DH went in search of a backup plan. He saw a message from a nearby lake town practically begging people to come to support their local businesses. Hurricane Helene devastated the area. They're struggling to stay open, while they wait for the town, marina, etc. to be restored. :( We decided to check it out. There was no internet there to check reviews, so we took our chances at what ended up being a not so great Italian restaurant. We ate a few bites of our meals, then left to pick up chicken salad sandwiches, caprese salad, mixed olives & a fruit tart at the grocery store for a replacement meal. (DH doesn't like olives, so this was my chance to spend too much money on the olive bar for DS & I to snack on for a few days.) We enjoyed the replacement meal & considered the other a donation to a good cause.

Sunday - nachos & a Mexican bowl

Monday - boneless pork chops, mashed potatoes & broccoli

Tuesday - pork roast, potato cakes (with repurposed mashed potatoes) & leftover Caprese salad

Wednesday - BBQ sandwiches (with repurposed pork roast), Suddenly Salad Classic pasta salad + carrots, celery & cucumbers w/ranch dip

Thursday - DH & I shared an Ahi tuna app., chicken sandwich & broccoli salad. DS had chicken Caesar salad

Tonight - Grilled BBQ leg quarters, baked potato, roasted mixed vegetables
 
Today was not a good day, I’m just exhausted and not feeling well. Everyone tells me I’ll instantly feel better after the surgery, hoping for the best.

It’s raining and raw here so I made a grilled cheese with salad. I used Europa which is a local cheese that won best cheese in the country for the second year in a row. It’s a little nutty and I use a 7 grain bread, it was delicious!
 
Have some butter cheese and shaved ham that needs to be eaten, so butter cheese broiled on a keto pita, with shaved ham on top.
I had to look up butter cheese. Apparently, it's sold at some specialty stores, but I've never seen that in the South.

I'm sorry you had another bad day. :hug: I'm sure you're looking forward to getting the surgery behind it. Hopefully, that time goes by quickly.

They sell this cheese (and the brand, all their cheese are great) At Whole Foods if you have near you. I got it through my dairy delivery but I’ve seen it at Whole Foods. If you are ever in CT they have two dairy stores. I highly recommend, their ice cream is dreamy!

Catching up. I was off to OH to pick dd up from college Sun-Tues. I got to stop at my parents’ house on Sun for the night and we went out for Chinese.
On Mon, dd and I went with her boyfriend and his parents to a Mexican restaurant. I had their Birria tacos and a margarita. I asked for Patrón to be SUBSTITUTED for the house tequila, but ended up with a margarita and a shot of Patrón! I hope the boyfriend’s parents (whom I was meeting for the first time) didn’t think I was a lush! 😂
Tuesday we drove back home. It was an 11 hour ride and we just got Popeye’s chicken sandwiches to go.
Wednesday…Chicken fricassee.
Thursday I made chicken and broccoli Alfredo. Dh isn’t a fan, so he got a grilled chicken breast, roasted broccoli and orzo.
Friday was pizza night.
 
We left a week ago for Disney, so here's a run-down of my week:
Sat- food court at ASMovies; I had a kid's meal of grilled chicken breast, ziti, alfredo sauce. For food court food, it was pretty good.
Sun- Lunch at Biergarten, dinner was ribs from the BBQ place at the American pavilion. Ribs were better last fall when I had them, but the mac-and-cheese side dish was delish! (DH and I shared, we were still pretty full from lunch). Also came out of dinner in time to see/hear Plain White Tee's perform "Delilah!"
Mon- Lunch at Geyser Point at WL (mediocre food, they are now an ADR location, and personally I feel not as good as they have been) and dinner at Paddlefish (seafood for all 3 of us was divine, I had the clam boil... yum).
Tues- Lunch at Flame Tree BBQ was fine, standard Disney BBQ chicken/pulled pork. Supper at Boma, which is always a family favorite. The no-longer-resident 8 year old was in his prime with the food (NOT kids options) and the desserts!
Wed- MK lunch was... whatever anyone grabbed. It was a confusing start as DD and the 8yo had a 9am breakfast at the Castle. We all ended up grazing for lunch, sharing a hot dog (in Tomorrowland?) and chips with DH for lunch. We "split" our party and DH and I went to Grand Floridian Cafe for supper: He had the strip steak, I had the fried chicken. Both were good (and the old fashioneds didn't stink, either!)

We flew home on Thursday and had a 4+ hour drive home from the airport (with 8year old in tow) so late lunch at McD's in Exeter, NH, pizza at home at 8pm. It was all fine, whatever, can't be too picky on long-drive days. Last night (Friday) was supposed to be lamb chops (just DH and me at home now) but it was a busy, BUSY day at work (summer session starts Monday, a full semester of organic chem lectures and labs in 4 weeks, it's crazy) so we ended up at the local Thai place, where the food it great and the bartender AMAZING. We shared steamed dumplings, crab rangoons, and chicken pik pow.

Tonight? Anyone's guess. The lamb chops are waiting to be cooked, but it's graduate school graduation at UMaine. I am losing 4 of my 6 TAs, the folks with whom I've worked and been friends with for the past 4 or 5 years. I am extremely proud of them and their hard work, and feeling a little sorry for myself. As DH sits with the faculty, we have to be in town by 5pm, but I know the traffic and parking will be awful, so probably leave here around 3:30 (even though it's only about 15 minutes away). I might just run to Sam's this morning and get a rotisserie chicken, so we can "pick" before and after the ceremony; I don't anticipate being home before 10pm. We'll see...

I really need to get my act together and go grocery shopping- we don't even have milk!

Grocery shopping and unpacking today.....and laundry (just didn't have time to do it at the resort). We were so totally exhausted by the time we got back from the parks everyday.
