What’s for Dinner Tonight?

We ran errands most of the day and stopped for Mexican while we were out. I had cheese enchiladas.

My washing machine is dying. I just texted our contractor to say hey I might have to buy a new one. Would I have it installed in the basement or new laundry room? He replied with interesting lol. Hoping it’s not dead as it’s not in my budget with all the housework.

Friday night, we shared Sesame Crusted Tuna & Parmesan Herb-Crusted Great Lakes Walleye w/Basmati rice & broccoli

Saturday, we went to watch an 80s band at a restaurant/bar. We shared fried portobello mushrooms & nachos.

Tonight, we arrived in Dayton, OH to cold, nasty weather. Dinner was the free meal at Drury Inn. Once again, it wasn't great, but it was better than going back out in the cold rain.
 
Yesterday dd had a tailgate after her lacrosse game so we had some of that stuff. I made corn salsa and chocolate chip cookie dough dip. They also had chicken tenders, fruit, assorted desserts. Once we got home, we heated up some store bought frozen pork carnitas for carnitas bowls with corn, rice, black beans, etc.

Tonight we had some homemade Italian wedding soup, grilled wings and roast beef sliders.
 
DH is out of town this week, my daughters are also both out of town vacationing this week and it's probably going to be more than a little shambolic around here. I may try to catch up with a few friends for dinner a night or two, but if left to my own devices I am highly likely to be a highly irresponsible sloth and eat popcorn for dinner if I decide to.
 
Yesterday was party meatballs. DH and I were out for the day so I started them before we left. Our family finds the "usual" recipe too sweet, so I use cocktail sauce (like you'd use for seafood) and canned jellied cranberry sauce (yup, the kind with the lines) instead of chili sauce and grape jelly. Served it with rice and broccoli (courtesy of SIL, because it was 6:30 and we weren't home yet).

Tonight will be braised beef. Top round roast is on sale this week, so I cut it into chunky strips (like boneless short ribs) and am using DD's braised short rib recipe. It has carrots, celery, and onions in it. I can't decide if I'm going to put potatoes in for the last hour, or just use a round of focaccia-like bread, warmed up, to sop up the goodness!
