Dinner tonight is impressive and bragworthy -- we're going out. (We all knew I wasn't making anything impressive.) We're headed out to our favorite seafood restaurant and I'm so looking forward to it!
I’m excited for tonight. A few friends and I are going to a local place that does live dinner shows. They invite guest chefs from all over the area to make dinner for a small group. Everyone sits around a very large bar type area while the chef cooks and talks. Tonight is Disney themed. The menu is inspired by spring rolls from Jiko, grilled shrimp and noodles from Ohana, and grapefruit cake from HBD. There will also be Disney trivia.
I chopped up a bunch of veggies, sauteed them, pan-fried tofu, mixed it all together, and dumped on 2 bottles of Trader Joe's red curry sauce and a can of coconut milk. Served it with rice. It was pretty good! I'd never cooked tofu before, but everyone enjoyed it and DD is excited that there is enough leftover for lunch tomorrow!
Tonight was Real Good chicken lasagna, an apple and the rest of the mini chocolate cookies.
Tomorrow we head to the ship and we'll have no internet for the week
