DH decided he was starving again, so we shared Oyster Stew, Clam Fritters w/rice & green beans & Blackened Rockfish w/mashed potatoes. We left much more than we ate. It wasn't very good.
Trying out a baked catfish tonight. It's supposed to mimic the result of pan-fried with lots less work -- so of course me being me opted for the less work option. Probably just season some rice and add a salad and call it done.
I'm making The Pioneer Woman's taco soup tonight, and I can't wait! It's making me hungry already just thinking about making it! I love making a big pot of soup that we can eat from all week.
I’m making tacos tonight. Beef for DH and black bean for me.
I also made granola and rice Krispy treats. Used up the box of Rice Krispies and a container of old fashioned oats. Granola is in the oven now and it smells delicious.
Tonight was a cheeseburger and homemade potato salad. I don’t make potato salad very often, since it’s more time consuming than macaroni salad, but I got in the mood yesterday and actually had all of the ingredients on hand for once.
@LoveDaisy I just got around to labeling my granola container yesterday! Now just need DGD to come home and eat it, lol. And yes, it does make the house smell good .
Spent most of today prepping veggies for the party. A bit tedious but it’ll be appreciated day of. Plus it makes sense for only one of us to cook at a time and “Weezle” has been elected User of the Wok; I’m much too slow nowadays.
Another bowl of lasagna soup today-gosh, that stuff is almost as filling as the baked version.
Chicken cutlets tonight and will be lunch during the week and another dinner. It's been a rough week with our car getting totaled in a parking lot by a complete idiot trying to pass us on the right while we were pulling into a spot and my dad coming down with bronchitis and an upper respiratory infection. I am quite ready for the universe to give us a much needed break and to get take out, but we have to get a new car so take out isn't happening. Sigh.
More roast chicken. I stuffed it with onion, parsley, and prunes for something different. I put it in a deep casserole dish and put tomato chunks, teeny round potatoes, onion slices, and about half a bottle of white wine around it and let it do its thing in the oven. Served it with a bag of pesto Cesar salad and a crunchy baguette.
Not that I've had a day, but I almost opened the rice-a-roni to make to go with our chicken, completely forgetting that I'd put potatoes in around the chicken. I'm tired, and the week's barely begun.
