What’s for Dinner Tonight?

Finished off the chili minus the tortillas; just a bowl topped with the rest of the avocado and chopped onions. Wasn’t in the mood for dessert so skipped it.

Made a pot of red braised pork belly for next week’s dinner party. Life is less hectic when some of the dishes can be made in advance.
 
Ran a bunch of errands. Looking for a champagne fridge (wine fridge I’ll use for champagne) for the new bar. I’m looking for one that is set up so half holds wine bottles and the other side can be used for beer and mixers. I didn’t buy one, I was hoping to see a few in person but most places only sell them online.

While out we stopped for lunch. I had clam chowder and fried scallops. Will probably just have a snack later.

I am sorry not to get back with the recipe earlier, we had a parent emergency on Thursday night and I didn't end up cooking period.
I did manage to dig up the recipe online, so you also helped me to make sure I have a copy easily available rather than fumbling around for the paper copy I've been using.

Tonight making some brown sugar garlic baked chicken with rice pilaf and a spinach based salad. Both daughters have said they'll be passing through after their days either working overtime or professional development, so I think they're looking for a hot meal they don't need to fuss making.
 
I remembered reading how a fellow poster made a lasagna soup and it sounded like a fast and easy meal so I made it after finding a few recipes online. Made some changes/substitutions that seemed to follow thru: added ricotta dumplings from the freezer, a small can of diced tomatoes, probably more parsley than called for but I love the taste and it’s so good for you. Used a handful of penne noodles since they were here and finished the soup by adding burrata and basil leaves after the soup came off the heat. Thank you for the thought; it was delicious!

Made my frozen dessert in advance for the Asian New Year party today.
Good thing as I forgot how many convoluted steps and pans were involved. Still, I’m sure it’ll be worth the effort.

We had roast pork loin with gravy, roasted broccoli and mashed potatoes tonight.

Last night, a friend and I took the train into the city to see a show and grab dinner. I had their birria quesadillas and a margarita. Fabulous dinner, fabulous show (it was the Golden Crappies, a fun awards show for all the Bravo shows😁) and fabulous company.
