Last night's veggie strudel was very good- it got high praise from the crew here! I made two. Both had mushroom, asparagus, leek, and red pepper filling, one with smoked cheddar cheese and one with ricotta. We used the leftover braised short rib gravy or a mustard bechemal I made as a topping/dunk.
Tonight we will have unexpected cheddar sausages from Trader Joe's with mashed potato cakes (I'm winging it here) and either fresh green beans or frozen peas, whatever I get to making. i think maybe I'll make some applesauce, too. I think it would go with the meal and we have about 8 apples hanging around here, looking pretty tired.
