What’s for Dinner Tonight?

Weekends almost always mean a trip to the dine-in movie theater for us. Today we saw Deadpool/Wolverine and feasted on buttered popcorn, chicken Caesar wraps, orange chicken and warm cookies for dessert. My black outfit was full of crumbs from eating in the dark as always. Worth it!

Hot, humid and likely to storm here, again. At least the weekend was clear and beautiful for a change. Trying out a new, not so healthy, splurge dish tonight. Pasta with mushrooms in a creamy sauce, sounds very rich. I think about five tablespoons of heavy cream in the sauce, so even if we love it we probably won't have it again until next year.

I'm way behind again, so I'll just post what we've had, since we've been home from our latest trip.

Friday: grilled ribeye, baked potato, roasted broccoli

Saturday: We were supposed to have loaded baked potatoes & pasta salad, but I wasn't feeling well & went to bed without eating. I'm not sure what DH had. We had our planned dinner for lunch yesterday, since the
pasta salad was already made.

Yesterday: grilled bbq chicken, potato salad, roasted asparagus & deviled eggs

Tonight: grilled burgers w/leftover potato salad

*Yes, we're eating a crazy amount of potatoes. :o We need to use up the bag this week.

There are still leftovers from last night’s dinner but the peoples want what they want. Going to let them slide tonight as the chicky will hold.

They had oxtails in brown sauce, fou fou (a dish that originated in west Africa and was adopted by the Caribbean; it’s a form of starch) the succotash leftovers and steamed Swiss chard.

After dinner they left to hangout but not sure where.

Update, we did not love it so will not be having it again. Way too rich, even just the flavor in your mouth overwhelmingly rich. Perhaps a glass of dry wine with a very acidic mouth might have helped. Honestly I'd have needed a (very) hearty swig after each bite this was so overpoweringly rich that I would have wound up more than a little tipsy. Not a make again.

Been watching a Korean show where they're doing a pop up restaurant and one of their featured dishes is an oxtail soup, kori gomtang. It's getting rave reviews from the customers.

Still hot, humid, threatening storms here so we'll be having a loaded salad with herb marinated chicken breast tenders cooked up in the instant pot last night and chilled. Unfortunately the weather pattern is set to hang on here possibly through the weekend, with tomorrow being the exception of leaving out the rain and simply leaving us with hot and sticky 90-degrees.

Supper tonight is grandma's chicken, basically chicken basted with parmesan cheese and mayo. Never thought I'd make anything marinated in mayo, but it's delicious. Usually we do it with breast pieces and sprinkle bread crumbs on before baking, but today I think I'll use chicken tenders and do them on the grill. Not sure what we are having with them.

Will they be basted before going on the grill? I've heard of mayo in chicken recipes before, but never on the grill.

Yup, we're gonna give it a shot; it's way too humid to heat up the kitchen. I'm worried about them burning, but DH says he can handle it; he's pretty good at grilling. We'll see; there's always the pizza place down the street if supper goes up in flames!

Maybe a grill pan lined with foil or a cast iron griddle or skillet?

I feel you on the not heating up the kitchen. This summer has been a bit bananas.

Back from a long day of shopping and glad for leftovers.
Made a pickled salad from thinly sliced cukes and grated carrots which is fine for all.
Reheated the jerk chicken for son and DGD.
I bought a quart of gazpacho from a fav store on the Eastside and that’s enough for me.

Brought some meringue shells home, filled them with lemon sorbet and dessert is made.
