What’s for Dinner Tonight?

No space for a electric fry pan? Or it is you don't have a fridge to keep any food?

Not cooking sounds great for about three days.
No fridge and the outlets in the kitchen are all just dangling from the walls and it’s not an orderly space for cooking in any fashion. We’ve got the coffee maker set up in the living room and use the kettle in the bathroom. Other options like the electric frying pan and crock pot are still packed and in storage from when we moved.

There are about a million things I would have planned/done differently if we had any idea the project would go so poorly.

hmmmm which would be cheaper, buying takeout all the time or do a resort only trip to disney just to cook??????

Now I want enchiladas... but I do use flour. It's a texture thing for me. I don't like the texture of corn tortillas for some reason. So while the flour ones get a bit gummy almost, I grew up with that so it doesn't bother me.

But enchiladas will have to wait. Right now I am really focused on cleaning out the freezer as much as possible because in a few weeks I am doing a big stock up trip. So I need space!

Tonight is eggs, diced potatoes (freezer), and whatever veggies need to be used up from the fridge.
 
Very boring tonight - leftovers
 
Roasted maple and sage rubbed chicken breasts and roasted root vegetables. I baked peanut butter and walnut cookies today. Tomorrow is leftovers!
 
🙄The child has informed me that her friends are arriving at 7:30 for pizza. DH has never been known to turn down pizza so I think that’s what we’re having along with a conversation about how asking is more appropriate than telling particularly when you want others to cooperate with your plans.

I hate that mid-reno, tired of take out and appliance improv place. Last time we did it, we were putting our home on the market. I didn’t want to touch anything so we really didn’t do any kitchen cooking again until we moved. Hopefully it won’t be too much longer for you guys.

lol my adult kids usually forget to ask, over Christmas break I was texting in a friend group chat about how sick I was feeling, fortunately one friend has a friend in dd22’s friend group warning me that dozens were coming to my house in a few hours to pregame. Those plans were changed.
 
We have a kitchen reno in our future and I am thinking about renting an Airbnb somewhere while they are doing it.
I keep reading about these kitchen renovation horror stories and I’m going to stick my toe in the water.

This is an approximation of an electrified camp kitchen:

A large toaster oven (Breville makes a nice one) induction burner (double or single) and water cooler can approximate a kitchen for a nice period of time. You can add an optional microwave oven/ pressure cooker. Just be sure a d/r or card table is available to use as kitchen counters/landing spots. Read up on your collection of one pot meals or just explore Asian cookery. Set up a shoe box with the seasonings you frequently use and place in a larger box that stores pantry goods.
The nice thing is many of us already have at least one of these appliances already.

My husband and three kids (4th is back at college) are attending a scout leadership function this weekend out of state. So it’s just me and the dogs. I made chicken nuggets and French fries. And it was delicious, lol

Disney isn't really in the cards but we did bug out for Christmas. I'm taking next week off to push the project. Lord willing, a couple of weeks will have us just down to some minor decor issues.
 
I didn't feel like standing to cook, so we decided to order pizza. Prosciutto, burrata & arugula for me, meat lovers for DH. DS will finish them off. :laughing:
 
We went out for AYCE sushi. I had some miso soup, seaweed salad, tempura veg, and then a few small rolls (sweet potato, garden).

My giant 16 year old sushi afficianoado had 8 giant rolls 🙄
 
I made the enchiladas and I am sorry to report that they were soggy and did not taste very good. I'm pretty sure it's just my lack of experience and hopefully I will continue to improve. I did use the corn versions in one pan and used the flour version in another. I really couldn't tell much of a difference between the two but that, again, is more than likely my lack of cooking skill.
I'm going to look at other recipes and techniques and give it another shot at some point. I really wish I was better in the kitchen and am thinking about trying to find some classes or learning opportunities locally in an attempt to improve.
